Spaghetti alla Nerano season has begun! Ferrazzani’s team member has a green thumb and he brought us some summer squash from his garden. I took some home and got cooking.
Spaghetti alla Nerano comes from the small southern Italian town of Nerano and is relatively new in the Italian canon. Simple in the way we love, it uses puréed fried zucchini and pasta water to make a creamy, emulsified sauce. We don’t have any of the traditional provolone del Monaco on hand, so I subbed in ’s Estero Gold, which boasts a similar sweet cream and nutty character. It’s so fast and easy to make.
