This refreshing cocktail is perfect to enjoy on a hot summer day🍋

Ingredients:
3 slices Cucumber
2 ounces Cucumber Vodka
3/4 ounce Simple Syrup
3/4 ounce Freshly Squeezed Lemon Juice
1/4 ounce Meyer Lemon Olive Oil
1 Egg white
Directions:
Muddle cucumber slices in a shaker. Add remaining ingredients.
Add ice to the shaker to about 3/4 full and shake vigorously.
Shake for 30-40 seconds and strain into a cocktail glass.

This super summery combination of flavors makes a delicious appetizer, but we’d be happy to eat a plate of these with a glass of wine for dinner. Our version uses our Fresh Basil Olive Oil and Peach White Balsamic Vinegar but you can experiment with your favorite EVOO and balsamic vinegar.
💚Ingredients:
6-8 ounces goat cheese, at room temperature
2 teaspoons lemon juice
2 tablespoons fresh thyme leaves, plus more for serving
1 loaf ciabatta bread, sliced
Fresh Basil Olive Oil, for drizzling
kosher salt and pepper
2 ripe peaches, sliced
1/4 cup fresh basil leaves
1/3 cup toasted walnuts
honey, for drizzling Peach White Balsamic Vinegar, for drizzling
💚Directions:
1. Preheat your grill to high heat or preheat your oven to 400 degrees F. In a medium bowl, stir together the goat cheese, lemon juice and thyme.
2. Place the bread on a baking sheet and drizzle with olive oil on both sides of each slice, season with salt and pepper. Place the bread on the grill and grill both for about 2-3 minutes per side or until lightly toasted.
3. Remove from the grill.
Spread the goat cheese over the bread and top with peaches.
4. Season with salt and pepper. Top with basil and walnuts. Drizzle with honey and balsamic. Serve and enjoy!

🥕Try this Grilled Carrots with Avocado and Mint Recipe, made with We Olive EVOO💚

1 tsp. cumin seeds
3 Tbsp. fresh lemon juice
2 tsp. honey
¼ cup plus 2 Tbsp. We Olive extra-virgin olive oil
1 serrano chili, thinly sliced
1 1" piece ginger, peeled, finely grated
Kosher salt
1½ lb. medium carrots, scrubbed, halved lengthwise, tops trimmed to about 1"
2 avocados, cut into large pieces
½ cup mint leaves

Directions
1. Prepare a grill for medium heat. Toast cumin seeds in a dry small skillet over medium heat, tossing often, until fragrant, about 2 minutes. Let cool.
2. Coarsely crush cumin seeds in a mortar and pestle or with the flat side of a chef’s knife. Transfer to a large bowl. Add lemon juice and honey. Whisk in ¼ cup oil until combined, then stir in chili and ginger. Season with salt. Let sit until ready to serve, which will give the chili and ginger time to infuse into the sauce.
3. Toss carrots with remaining 2 Tbsp. oil on a rimmed baking sheet; season with salt. Grill carrots, turning occasionally, until lightly charred in spots and tender, 14–18 minutes. Immediately transfer carrots to bowl with sauce. Toss to coat; season with salt.
4. Arrange avocado and carrots on a platter. Spoon any remaining sauce over, then top with mint. Serve carrots warm or at room temperature.

Spice up your coleslaw🌶 This recipe puts a twist on the traditional Coleslaw. Here we add our We Olive Siracha Lime White Balsamic Vinegar to a traditional coleslaw while also adding We Olive Jalapeño Oil for an even spicier burst of flavor!

💚Ingredients:
3 Carrots, Shredded
4 Cups, Cabbage, Shredded
½ Cup of We Olive Jalapeño Oil
½ Cup of We Olive Sriracha Lime White Balsamic Vinegar
¼ Cup of White Sugar
¼ Tsp Black Pepper
¼ Tsp Salt, Adjust According To Taste
¼ Cup Mayonnaise
💚Directions:
Heat vinegar so that sugar will dissolve in it. Microwave heating works well for this.
Add salt and pepper to heated vinegar.
Mix together mayonnaise and Siracha Sauce.
Add to cooled vinegar mix. Add black pepper and whisk.
When ready to serve, pour over shredded vegetables.
💚Notes: If you like your coleslaw on the creamier, less tangy side, increase the mayonnaise and decrease the Jalapeno Oil.

💚When you purchase fresh Extra Virgin Olive Oil (EVOO), it is important to store it properly to ensure it retains its wonderful flavor and many health benefits. The three biggest threats to EVOO are heat, light, and air! Exposure to these three things will cause oxidation, and thus rancidity, in your olive oil.

💚The best place to store your olive oil is in a dark, cool location such as a wine cellar or cupboard. Never ever keep your olive oil near the stove, while it might seem convenient, it will expose the bottle to too much heat and cause it to spoil more quickly. With proper storage your EVOO will last for up to 18 months, however it is always best to consume your olive oil within 12 months of pressing. Unlike wine, olive oil does not get better with age.

💚Since light and air are two of EVOO’s enemies, it should come as no surprise that a good storage container is necessary to extending the life and continued health benefits of olive oil. Olive oil enthusiasts should store their EVOO in either tinted glass or nonreactive metal containers. Stainless steel is a good choice, but he sure to avoid metal containers made of either copper or iron.

💚Olive oils are delicious and offer a multitude of health benefits, but they are fragile, so make sure you are treating them properly.

The spicy chicken sandwich we'll never stop making🌶🍔 This Memorial’s Day grill up something less expected…these are deliciously juicy and have just the right kick of flavor!

💚Ingredients:
4 Boneless Chicken Thighs
2 Tablespoons We Olive Jalapeño Oil
4 Teaspoons We Olive Siracha Hot Chili Seasoning
Salt
Pepper
Lettuce washed and dried
Tomato, Sliced
Red Onion, Sliced
4 Slices of Pepper Jack or Monterey Jack, optional
💚Directions:
Heat a grill to medium-high heat
Place the chicken breasts on a baking sheet or large dish and pat dry. Drizzle lightly with We Olive Jalapeño Oil and rub the chicken to coat evenly.
Sprinkle half of the spice mix over the tops of the chicken, turn the chicken over, and sprinkle the remaining half of the spice mix on the bottom side of each thigh so the chicken is evenly coated in We Olive Siracha Hot Chili Seasoning, Salt, and Pepper.
Place the chicken thighs directly over the heated side of the grill and grill for about 5-6 minutes per side, depending on the thickness of your chicken, until the internal temperature of the breasts reaches 160 degrees using an instant-read meat thermometer. You can also check whether the chicken is done by making a small cut into the thickest part to see if it is opaque in the center, or pressing on the thickest end of the chicken with your finger to see if there is any resistance. If there is no resistance, the chicken is done. Remove from the grill and rest for 5 minutes.
Heat a large pan or griddle over medium heat. Separate the top and bottom buns and spread the cut sides of each bun with a little mayonnaise. Lay each bun mayonnaise side down in the pan or on the griddle, working in batches as necessary, and cook until toasty, then remove to a plate.
Prepare each sandwich with a toasted bun, 1 grilled Spicy chicken thigh, and slices of lettuce, tomato, and onion, along with additional mayo or aioli. You could also add cheese if you would like. Serve immediately!

💚The Best Dipping Oil for Bread💚Look no further, we have a recipe for the best bread dipping oil ever. This is our go-to, classic Italian bread dipping oil, but you can check out our blog post on How to Make Bread Dipping Oil for inspiration on playing around with olive oils, balsamic vinegar and fresh herbs.

Ingredients
1/2 cup We Olive Fresh Garlic Olive Oil
1 tablespoon Italian Seasoning (dried thyme, oregano, rosemary, basil and marjoram)
1/4 We Olive Aged Balsamic Vinegar
kosher salt & freshly ground black pepper to taste

Directions
Combine Garlic Olive Oil, Italian seasoning and Aged Balsamic in a bowl and stir to combine. Taste and season with salt and pepper. Serve with crusty bread and devour.
