This cheese has all the things: fudgy texture, crunchy bits, butterscotch notes, caramel color, AND it’s lactose free. Aged for 26 months, this could qualify as hard tack for your backpacking adventures. It doesn’t spoil, mold, rot, “go bad”, or melt in the warm weather.
You can toss it in your pack as-is (wrapped of course)
and enjoy when the mood hits you. Beemster XO, as in extra old, delivers. This is an example why they’ve been making cheese for 10,000 years or more: to preserve your milk and carry with it all the benefits
