Summer BBQs are right around the corner, and we’ve got the perfect side dish:
Scratch Made Potato Egg Salad
Ingredients:
Peeled, cubed, and cooked potatoes
Diced white onion
Yellow mustard
Mayonnaise
Hard boiled eggs
Salt
Black pepper
Onion powder
Garlic powder
Step 1: Prep the Essentials
Peel, cube, and cook 2 pounds of potatoes. Dice ½ cup of white onion and celery. Boil 4 eggs. Prepare a buttermilk ranch dressing (we have a full video that walks you through it).
Step 2: Build the Base
In a large bowl, combine the potatoes, white onion, and celery. Add 3 teaspoons of yellow mustard and ½ to ¾ cup of mayonnaise, depending on your preference. Crush the 4 boiled eggs into the bowl, then add 2 tablespoons of buttermilk ranch dressing.
Step 3: Mix and Season
Add 2 teaspoons each of salt and black pepper, along with a few handfuls of onion powder and garlic powder for an impactful flavor. Mix thoroughly by hand until everything is well combined and evenly coated. And you've prepared one of my favorite family recipe, that is an absolute blast at parties.
All natural, all organic and easy to make. A guarantee hit at summer BBQ's and I guarantee you, this year's will be an absolute knockout.
