DYK the majority of meat sold in grocery stores and traditional meat markets has already gone through multiple temperature changes before it ever reaches your kitchen?

Most consumers picture “fresh” meat being processed nearby and immediately placed in the meat case — but in reality, conventional meat often travels through a long supply chain involving warehouses, transportation trucks, distribution centers, backroom coolers, display cases, your shopping cart, your vehicle and eventually your refrigerator at home.

Even when handled properly, every temperature change impacts meat quality.

Repeated freeze/thaw cycles and prolonged refrigeration exposure can:
👎 Reduce moisture retention
👎 Affect texture and tenderness
👎 Increase drip loss during cooking
👎 Diminish flavor quality over time
👎 Increase oxidation and discoloration
👎 Create more opportunity for bacterial growth if temperatures fluctuate improperly

One of the questions we hear most often is:

“Why is your meat frozen instead of displayed in a big refrigerated meat case like other meat markets and grocery stores?”

The answer comes down to quality, transparency, and the way we believe food should be handled.

Other local meat markets and grocery stores rely on large refrigerated display cases designed to keep meat looking “fresh” for extended periods of time. But something many consumers don’t realize is that the bright red color of meat in those displays doesn’t always mean it’s fresher.

Many commercial meat operations use modified atmosphere packaging (MAP), which uses gases like carbon monoxide or carbon dioxide to help preserve color and extend shelf life. Carbon monoxide in particular binds to the natural pigments in meat and helps it maintain that bright cherry-red appearance much longer than it naturally would.

While these practices are approved and commonly used in the industry, they can make it harder for consumers to judge freshness based on color alone. Meat may continue looking “fresh” visually even as quality naturally declines over time.

We choose a different route.

The vast majority of our beef, pork, and chicken is locally raised on our farm with care and frozen at peak freshness to lock in flavor, quality, and nutrition — not left sitting in a large open cooler waiting to be sold.

Keeping our meat frozen allows us to maintain tighter control over product handling while reducing waste and preserving quality.

For us, “farm fresh” isn’t just a trendy phrase. It means transparency, intentional practices, and giving customers confidence in the food they bring home to feed their families.
