Let's make the most ah-mazing version of Dalgona, Matcha Dalgona with Aki MatchaπŸ’š
One of the best Matcha drink I've ever made!
πŸƒ Ingredients:
- 2 tsp Matcha Powder - Ceremonial Grade
- 1/4 cup heavy whipping cream
- 8oz whole milk
- 2 tsp sugar (more or less to taste)

πŸƒDirection:
- Place the heavy whipping cream and sugar in a medium sized bowl and beat mixture until it turn stiff peaks.
- Add in the matcha powder and whip some more until the cream holds its weight.
- Pour milk and ice in a glass and add the whipped matcha on top of the milk.

- Cheesecake Base:
200 grams shortbread cookies
1 teaspoon matcha green tea powder
65 grams unsalted butter, melted

- Cheesecake Filling:
400 grams cream cheese, room temperature
80 grams granulated sugar
2 teaspoons matcha green tea powder
400 milliliters whipping cream
1/4 cup lemon juice (from about 1 lemon)
1/2 teaspoon vanilla extract
2 teaspoons powdered gelatin
2 1/2 tablespoon cold water
Extra matcha green tea powder, for dusting

- Cheesecake Base
1. Mix together the melted butter, crumbled graham crackers and matcha green tea powder, then press them into the bottom of an 8-inch spring form pan.
2. Then place this in the fridge while you make the filling.
- Cheesecake Filling
1. Place the cream cheese in a bowl and beat with an electric mixer until smooth.
2. Add the matcha green tea powder and sugar and combine.
3. Then add the whipping cream, lemon juice and vanilla extract and mix until smooth.
4. Mix together the gelatin and water in a small bowl and microwave for 30 seconds.
5. Add the gelatin to the filling, and mix together with an electric mixer until fully combined.
6. Pour the filling into the cake pan and return to the fridge to chill until set (approx. 3 hours).
7. Carefully remove the cake from the spring form pan by running a sharp knife around the edges of the cake, then release the sides of the pan and carefully slide off the cake.
8. Place some matcha green tea powder into a mesh sieve and dust over the entire surface.

Unlike regular mochi made from glutinous rice, Matcha Warabi Mochi is made from Bracken Starch that makes Mochi's texture deliciously chewy, more jelly-like and melts quickly in your mouth🀀

-50g Warabimochiko or Bracken Starch.
-30g Sugar
-250mL Water
-1 tsp Aki Matcha Powder
~Coating:
-1 tsp Aki Matcha Powder
-12g Kinako (Sweet Toasted Soybean Powder)
-8g Icing sugar
πŸƒDirections:
1. Combine Warabimochiko, sugar, matcha powder, and water and mix well.
2. Filter the mixture into a pot.
3. Heat the pot on medium
4. Use a wooden spatula and stir constantly until the mixture is thicken and turns translucent.
5. Remove the mochi from the heat and transfer it to a baking sheet or a rectangular baking pan.
6. Spread it to around 1 inch thickness.
7. Put in the freezer for 5 minutes or when it is lukewarm.
8. Meanwhile, mix all the ingredients for coating together.
9. Once it is cooled, cut them into small cubes and coat them with the premixed powder.
