Never thought I'd have a deer like this come into the garage. This was from a Wisconsin DNR poaching case. Watch the YouTube video for the full details! As unfortunate as it is that this buck was shot illegally, at least he didn't end up in a landfill. Head will be on a wall for forever viewing and the meat is being donated to the Shalom Wildlife Sanctuary to feed some tigers. Good luck everyone going out tomorrow and battling the mosquitoes! I'll be taking deer tomorrow on a limited basis depending on timing (kids soccer tournament most of the day). I'll will not be available 9/14-9/23.

Whether you use me or another processor, in these warmer temps have a plan in place before you hunt as to what you will do if you are successful with a harvest. It's key to get the animal gutted immediately upon finding and keep the chest cavity open. Don't be in a rush to stuff the cavity with ice. Ice is a natural insulator and can actually hold in heat. For an early season harvest I will leave the chest cavity open for 30-45 min to let heat escape while in the shade if possible, then in an ice fishing sled with ice in and around the carcass until taken as quickly to be processed (if its a few hours of wait time, drain out water from the melting ice).

Feel free to call me if you want any advice even if I'm not available to butcher. Not saying my way is the best way just a fellow hunter who doesn't want any meat to go to waste. I'd rather lose your business than possibly have your harvest spoil.

The best time of the year is just about here, the rut. Good luck to everyone and looking forward to seeing all trophies, bucks and does. Each harvest is something to cherish and be proud of.

Special shoutout to my buddy Jim on harvesting his first whitetail in his life! This deer is in my top 5 favorite that I’ve ever butchered. To often we get caught up in the deer industry and how big the buck is. If a deer gets your heart going and you’re happy harvesting it, THEN TAKE THE SHOT. Don’t let others opinions sway what would make you happy.

Had a blast with Experience MKE Sportfishing today. Had a triple and numerous doubles and some acrobatic rainbows. Captain Dan and his crew got us on the fish the whole trip. Highly recommend booking a trip with them! They had the fish all cleaned up for us and had some for supper!

The picture doesn’t do this buck justice, what a deer. One of the darkest hides I’ve ever seen. 19 inch spread, great mass, and was a fighter. This deer was the definition of character.

Meat stats:

164.4 lbs dressed

75.2 lbs trim
13.6 lbs roasts (these numbers can vary depending on which roasts the customer wants to keep as roasts or have them added to trim)

88.8 lbs of total meat!

54% meat return!!!

I will be open through muzzle loader and into later archery season (will be closed 12/5-12/12 and 12/28-12/31).

As we close up another Wisconsin Gun Season, wanted to thank all of my returning and new customers for trusting me with their harvests!

It doesn’t matter how many bucks I butcher, taking these pictures never gets old.

Meat stats:

220.8 lbs dressed

10.5 lbs back strap/tenderloin
94.8 lbs of trim (this customer wanted all the other roasts added into trim)

105.3 lbs total meat!

47.7% meat return from dressed weight!

Every customer gets their meat stats sent to them once butchering is complete, typically the day of drop off (I aim for less than 24 hour turn around for my customers). And this was one happy customer with over 100 pounds of meat from one deer ☺️
