Let’s talk hams. Did you know that hams are pumped with cure? What’s cure?
Cure is a mix that we make with White sugar, brown sugar, salt, and sodium nitrate. We then add water and pump the hams thoroughly. We let it sit and “marinate”.

They then get rinsed off and put into what I like to call a “ham sock”. It’s really called a stockinet but I like ham sock better. We then hang in the smoker and spray them with Liquid smoke ( if being cooked with the old smoker) or we smoke with beach wood in the new smoker. We smoke for about 16-20 hours depending on the size of ham.

Just a reminder for all the hunters out there, we will be accepting whole deer this weekend and through archery season. We are accepting share the harvest deer as well, and we will be testing for chronic wasting disease.
