Ingredients:
• 12 oz spaghetti
• 1 tsp salt (for pasta water)
• 2 lbs cherry tomatoes or grape tomatoes, halved
• 2 tbsp Smude Sunflower Oil Infused with Tomato Basil
• 1 garlic clove, minced or grated
• 1 tsp salt
• ½ tsp black pepper
• 1/8 tsp red pepper flakes
• 10 fresh basil leaves
• ½ cup grated Parmesan cheese (more to taste)
• Optional: creamy burrata cheese for topping
Instructions:
1️⃣ Bring a large pot of water to a boil. Add salt and cook spaghetti until 2 minutes shy of package instructions.
2️⃣ In a large skillet, heat Smude Tomato Basil Sunflower Oil over medium heat. Add cherry tomatoes, garlic, salt, pepper, and red pepper flakes. Cook for about 10 minutes, stirring occasionally, until tomatoes soften and become saucy.
3️⃣ Reserve ½ cup pasta water and add cooked pasta directly into the skillet with the sauce. Toss everything together and cook for another 2 minutes.
4️⃣ Add reserved pasta water and Parmesan cheese. Stir until creamy and fully combined.
5️⃣ Serve immediately with fresh basil, an extra drizzle of Smude oil, and optional burrata cheese on top.
