Zucchini blossoms (also known as squash blossoms) are a delicate and seasonal treat with a mild, slightly sweet flavor. Here are a few popular ways to prepare them:
🌼 1. Classic Stuffed and Fried Zucchini Blossoms
Ingredients:
12 fresh zucchini blossoms
1 cup ricotta cheese
1/4 cup grated Parmesan
1 egg yolk
Salt & pepper
Fresh herbs (like basil, mint, or parsley), finely chopped
1 cup all-purpose flour
1 cup sparkling water (cold)
Oil for frying
Instructions:
Gently clean the blossoms: Remove the stamens inside and any tough stems. Be gentle—they’re fragile.
Make the filling: Mix ricotta, Parmesan, egg yolk, herbs, salt, and pepper in a bowl.
Stuff the blossoms: Use a small spoon or piping bag to fill each blossom with 1–2 tsp of the ricotta mix. Gently twist the petals to close.
Make the batter: Whisk flour with sparkling water until smooth.
Fry: Heat oil to 350°F (175°C). Dip blossoms in batter, then fry until golden and crisp (about 2–3 minutes per side).
Drain and serve: Drain on paper towels. Sprinkle with sea salt and serve warm.
🥗 2. Zucchini Blossom Salad with Lemon and Olive Oil
Ingredients:
8–10 zucchini blossoms, halved lengthwise
1 small zucchini, shaved thin
2 tbsp toasted pine nuts or walnuts
Shaved Parmesan
Arugula or baby greens
Juice of 1/2 lemon
Extra virgin olive oil
Salt and pepper
Instructions:
Toss arugula, shaved zucchini, and zucchini blossoms in a bowl.
Drizzle with lemon juice and olive oil.
Top with nuts and Parmesan.
Season to taste and serve fresh.
🍕 3. Zucchini Blossom Flatbread or Pizza
Ingredients:
Pizza dough (store-bought or homemade)
Olive oil
Fresh mozzarella
Zucchini blossoms (6–8), torn
Ricotta (optional)
Garlic (minced)
Chili flakes (optional)
Instructions:
Preheat oven to 475°F (245°C).
Roll out dough and place on baking sheet or stone.
Brush with olive oil and sprinkle garlic.
Add mozzarella and dollops of ricotta if using.
Top with zucchini blossoms.
Bake for 10–15 minutes until crust is golden and cheese is bubbling.
Finish with chili flakes and a drizzle of olive oil.

Ingredients:
6–8 zucchini blossoms, chopped
6 eggs
1/4 cup milk or cream
1/4 cup grated cheese (Parmesan, feta, or goat cheese)
1 tbsp olive oil
Salt and pepper
Instructions:
Preheat oven to 375°F (190°C).
Sauté chopped blossoms briefly in olive oil until just wilted.
Beat eggs with milk, cheese, salt, and pepper.
Pour eggs into skillet and stir gently.
Cook until edges set, then transfer to oven for 8–10 minutes until set.
Let cool slightly before slicing.
