High-Protein, Low-Calorie Cheese Recipe

Looking for a delicious, high-protein cheese recipe that's also low in calories? This recipe is perfect for anyone seeking a healthy snack. While it isn’t directly related to olive oil, you can enhance the flavor by drizzling any dark balsamic vinegar over the top.

The process is simple: combine all ingredients in a blender, then bake the mixture in a parchment lined small springform pan (an 8-inch pan works well) or a small parchment lined baking dish.
The best part about this cheese cake recipe is its nutritional value. Each slice contains just 90–110 calories and packs in 12 grams of protein. AMAZING & SO GOOD! I have adjusted this recipe for our high altitude.

2 cups of low fat cottage cheese
1/2 cup of Fage zero yogurt
2 large eggs
Several drops of monk fruit liquid sweetener OR 1/4 cup of Monk fruit sugar
1 scoop of vanilla protein powder
1 teaspoon of vanilla or vanilla paste
1 tablespoon corn starch

Preheat oven to 325. Blend all ingredients together and pour into a parched lined small spring form pan or parchment lined baking dish. Check it 40 minutes and if it still looks jiggly leave it in for another 10 minutes. Turn off the oven-prop open the door and let it rest for at least 30 minutes. Refrigerate at least 4 hours and slice and enjoy!

HERBALICIOUS! Just planted my favorite go to herbs this past week. LOVE Italian Oregano, Hot & Spicy Oregano, Greek Oregano and Lemon Thyme. So what's the difference and uses for each? Here ya go!

GREEK OREGANO: STRONG, BOLD, EARTHY AND CLASSIC. Uses: On a greek salads with feta, tomatoes and olive oil! Chicken or lamb marinade, or on grilled meats. Add to tomato based sauces. My favorite chicken thighs, olive oil, sea salt and Greek Oregano!

ITALIAN OREGANO: MILD & SOFT, SUBTLE AND SWEET. Uses: Pasta sauce, Italian soups like minestrone, chicken parm, or lighter tomato dishes -makes a great herb blend. My favorite, anything with mozzarella cheese!

HOT & SPICY OREGANO: BOLD + HEAT, LIKE GREEK BUT WITH A KICK. Uses: grilled chicken or steak adds kick similar to chili flakes but smoother. Put it on a homemade pizza for an extra spice. Love it on my avocado toast.

LEMON THYME: LIGHT, FRESH CITRUSY & CLEAN! LEMON TASTE WITHOUT THE SOUR! Note: If you use lemon, use this! Smooth with a subtle taste. Uses: chicken thighs (love them). Vinegar+olive oil+ garlic+ lemon thyme as a dressing. My favorite: lamb meatballs, veggies, scrambled eggs.
