We are open normal hours today, 10a-4p before Labor Day!

We have a nice selection today in our retail case, as well as in our cooler and freezers in the front of our store! We have plenty of pork ribs in our freezer vacuum sealed and ready for a quick thaw (under running cold water please!), to go on a grill or smoker. In addition to our great sausages, we also have Thoma kielbasa and hot dogs! With tomorrow being a holiday, we highly recommend giving us a call before coming by to make sure we have what you are looking for. We are happy to set something aside or walk you through alternatives if we have already sold out of specific cuts. See ya!

Weekly sausage drop is here with FIVE different links!

We were busting our butcher butts yesterday to prepare for Labor Day weekend, and it paid off! We have a bunch of beautiful sausages in our retail case starting today. We have our classic Hot Italian (definitely spicy!), our Hot Hungarian (warm and sweet), Red Chorizo (spiced and garlicky, we also have this in frozen 1 Lb packs), B**r Brats, and Garlic Kielbasa (not smoked)! We are getting our beef in today and should have retail cuts available in our case soon, but for now we cut some pretty Baby Back Ribs in our freezer, Lamb Porterhouse chops and some fresh ground beef! Give us a call to have us set anything aside for you (we already have a nice preorder list going), or stop by in person. See ya!

Chicken and pork is back in the case today!

Our chickens and hogs (two of them!) arrived just in time for us to get it all broken down for our beloved bone in chops, pork shoulder, ribs, and more just in time for Labor Day weekend! We are busy making SIX different sausages to see you through the celebrations and will have those in the case tomorrow! In the meantime we also have tons of chicken freshly packaged in our retail case! We did our usual breakdown and did some BBQ rubbed chicken drumsticks so you can have a nice little appetizer while you are on the grill this weekend. Happy Sunday, we’ve got beef and a fun lunch special today!

Our case has some goodies left still even after a busy Saturday! Plenty of ribeyes, strip steaks, and some fun cuts like oysters, chuck eyes, and toro. We are also running a special little menu item (while supplies last)- hot dogs! We have the classic ketchup and mustard, as well as some fun fancy ones. If you’re feeling feisty, you can even get a double barrel dog (we won’t tell 🙊). See ya!

Come see us today at Spirit Summer Recess!

The shop is open today still for normal hours, but we also have a team slinging hot dogs and smoked chipotle sausages at summer recess starting at 2pm until we sell out! We’ve got tons of fun toppings and can’t wait to see y’all there! Come grab food from us and some of the other wonderful vendors while enjoying music and good times. If you’re staying out of the heat, you can still come see us at the shop for sandwiches and steak. We finished getting all of your favorite cuts cleaned up yesterday and have plenty to go around. Beef case is restocked!

We broke our beef down yesterday, and now have a beautifully full case to show for it! All of your favorites are available in the case including some quick to sell out cuts like flank, skirt, hanger, and tri tip. We also have out our great bone in pork chops, sausages, and chicken! If you’re looking to have one last hurrah before the weather changes over, stop by! We’ve got plenty of great ribeyes and NY strips for your grill. Weekly sausage drop and a long awaited freezer restock!

We’ve got three classic sausages this week in the shop, our Sweet Italian, Hot Hungarian, and B**r Brats. In case this is your first time at the shop, let us tell you about them! Our sweet Italian is made with a bunch of fresh garlic, red w**e, and a nice dried spice blend including fennel, anise, and sage. Our hot Hungarian was recently revamped for Titusz, with Hungarian and smoked paprika, tomato, and a little bit of cayenne. Not spicy, just warm! Lastly, our b**r brat! We’ve got fresh parsley, b**r, and pickled mustard seed to round it all out.

We’ve also just dropped a fresh batch of the 90’s Taco Night!!! After being out of stock for a while, we listened to you guys and just filled our freezer again. It doesn’t get any quicker or easier than this for a classic weeknight dinner. Inspired by the tacos we grew up with, this is our ground beef absolutely packed with chili powder, garlic and onion powder, and other spices you know and love. We’ve got a new burger on the menu!

We decided it was time to mix up the regular sandwiches, and not to brag, but our chef has outdone himself. Meet the Cherry Poppin’ Smashie! Smoky, sweet, and creamy, this is a super luxurious and savory burger. Jalapeño popper spread made with house smoked cream cheese, a lovely cherry mostarda adds some acidity, and topped with pickled red onions and our crispy beef bacon all in delicious balance. A great burger for when you want to indulge but don’t want to go crazy! Order online or in store (not available thursdays). See ya!

Happy Tuesday, we’ve got chicken again!

We are fully stocked once again with our fresh chicken for the week! We just got done breaking it all down and our case is sitting pretty waiting for you to arrive. We have our usual suspects of whole chickens, leg quarters, skin-on/skinless boneless breasts, bone-in skin-on thighs, and marinated drumsticks! The drumsticks this week are in a super zesty Italian herb marinade, packed with orange zest, fennel, garlic, parsley, and more! Stormy weather is here, but so is cozy delicious soup!

Moussaka is normally a layered and warmly spiced meat and eggplant dish with tomato and bechamel- but at Fat Butcher it’s soup! We roasted up a bunch of fresh eggplant and peppers, browned up our incredible ground beef and made up a hearty batch for our freezer. This is super savory with our beef stock, cream, and whipped cheesy potato! All of the flavor of the traditional Greek version, but with none of the dishes. Stop by to grab some before the rain hits, see ya!
