We have NEW Valentine’s Day plate: cheese and craft chocolate pairing!
4 cheese match with 4 chocolates!
1. Bûche de Luçay ( goat’s milk from France .jacquin ) with Citrus Melange à trois from from Utah, made with cocoa that they obtain directly from our farmers in Ecuador. Combined it with the oils from yuzu – an incredible citrus from Japan, tangerine, and grapefruit and added tiny little pieces orange fruit leather.
2. Beppie ( sheep’s milk gouda from Netherlands ) with from Switzerland: Esmeraldas 42% Dark single origin beans from Esmeraldas Coast, Ecuador. Silky notes of caramel, hazelnut and salt float through this chocolate!
3. Comté 18 month (raw cow’s milk from France ) with from California: 75% dark single origin: Brazil, Fazenda Camboa estate. The cacao is deliciously earthy and nutty on its own, but when combined with a touch of sugar, the flavors expand to include honeysuckle, walnut, and even fresh grapes.
4. Black Ledge Blue (raw cow’s milk from in Connecticut) with in Arizona, Warm spices swaddle rich brown fruits in these flavorful beans from Ben Tre, the birthplace of Vietnamese cacao. 70% dark.
