🌎 The Coast to Coast Showdown starts tomorrow… and the first deliveries started rolling in this afternoon.

There’s something about the day before one of these weekends that we love.

Boxes start arriving. Coolers start filling up. The Meat and Seafood crew starts unpacking things you definitely don’t see in a grocery store every day—and an idea we’ve been working on for weeks suddenly starts becoming real.

Today, fresh fish began arriving from around the country. Japanese A5 Wagyu and Australian Wagyu are here. Our cooler is getting pretty full, and we still have more coming tomorrow morning.

By the time we open the Full Service Cases tomorrow, it’s going to be quite a showdown.

We’ll have live oysters from the East Coast going up against oysters from the West Coast. Florida Red Grouper from the Gulf against wild Halibut and Coho Salmon from Alaska.

Then we head a little farther from home.

Japanese A5 Wagyu from the Far East. Australian Wagyu from the South Pacific. And representing the heart of America, Bison Ribeyes and our own H.G. Hill Angus Reserve.

And maybe our favorite matchup of the weekend doesn’t involve a steak or a fish at all.

🦞 The Lobster Roll Showdown.

Cold Maine-Style, filled with chilled lobster and a classic creamy dressing, versus hot Connecticut-Style, served warm with melted butter. We’ll be making both fresh to order all weekend.

That’s really what we wanted this weekend to be about.

Not just filling the cases with steaks and seafood, but giving Pleasant View a chance to taste how different parts of America—and different parts of the world—do food.

Our first shipment of fall mums arrived today, bringing the warm colors of the season to our store and, soon, to porches all around Pleasant View.

These beautiful local mums were grown by an Amish farming community in Christian County, Kentucky—only about 60 miles from Pleasant View. They’re a wonderful way to welcome fall while supporting growers close to home.

✈️ OUR NEXT STOP HAS BEEN DELAYED…

Our time in Spain with Passport to Flavor is drawing to a close, but it looks like we’ll be spending a few extra days at the store before departing for our next destination.

Don’t worry—the delay won’t shorten the journey. Once we arrive, our next Passport to Flavor experience will continue through at least October 4.

Before we leave Spain, there is still time to explore a country where food is meant to be shared, savored and enjoyed slowly. From colorful tins of conservas and paella rice to alioli, quince paste, Marcona almonds, Ibiza sea salt and even fried-egg potato chips, this month has introduced us to flavors rooted in Spain’s coastal waters, regional traditions and love of gathering around the table.

If you haven’t taken the trip yet, don’t miss your final opportunity to experience a little taste of Spain right here in Pleasant View.

Labor Day Weekend is about to taste a little different at H.G. Hill.

September 5–7, our Full Service Cases are going Coast to Coast and around the world, bringing together some incredible flavors from near and far.

Japanese A5 Wagyu from the Far East. Australian Wagyu from the South Pacific. Bison and H.G. Hill Angus Reserve from the American Heartland. East Coast oysters and West Coast oysters. Florida Red Grouper from the Gulf Coast. Wild Halibut and Coho Salmon from Alaska. Norwegian King Crab from the Barents Sea. Patagonia Red Shrimp from the South Atlantic. And Maine and Connecticut-style Lobster Rolls representing two very different ways to enjoy an East Coast favorite.

And this time, you get to build the dinner.

THE FULL SERVICE CASES ARE SET FOR THE WEEKEND!

This weekend, two standouts are waiting on opposite sides of the case.

From the Land, we have Certified Angus Beef Picanha. Also known as the top sirloin cap, this Brazilian steakhouse favorite is prized for its bold beef flavor and signature fat cap that bastes the meat as it cooks. Grill or roast it whole, or cut it into thick steaks for high-heat cooking.

Across the aisle, Le Petit Barachois Oysters have arrived from the cold waters of Prince Edward Island. These cocktail-sized oysters have deep cups, clean shells and a bright flavor that balances sweetness with just the right amount of salinity. Serve them chilled on the half shell with lemon, cocktail sauce or a simple mignonette.

The rest of the cases are just as exciting. From the Land, you’ll find Australian Wagyu Ribeyes and Strip Steaks, Certified Angus Beef Sirloin Fillets, Kangaroo Loin and Red Stag Chops.

From the Sea, we have Wild Coho Salmon, Amberjack and Live Maine Lobsters alongside this weekend’s oysters.

🌶️🔥 Hatch Fest may be over, but Hatch season isn’t!

Today we loaded up the smoker with a fresh batch of Melissa’s Hatch Chiles, and that unmistakable Hatch aroma was back in the air.

We have Mild, Medium and Hot, available fresh or smoked right here at H.G. Hill. The smoker blisters and softens the chiles while adding even more smoky flavor to what makes Hatch chiles so special in the first place.

Then the fun begins.

Chop them over a cheeseburger or steak. Fold them into scrambled eggs or breakfast burritos. Stir them into queso or mac & cheese. Add them to tacos, pizza, cornbread, grilled cheese or a pot of chili. Once you have a container in the refrigerator, you start finding reasons to put Hatch chile on just about everything.

And if you’ve become a Hatch regular, you probably already know the trick: grab extra while the fresh crop is here. Peel them, portion them out and freeze them, and you can keep a little taste of Hatch Valley around long after the season ends.

Fresh or smoked. Mild, Medium or Hot.
