This is a scheduled off week for Durham, but we are scheduled for Dover on Wednesday and Exeter on Thursday! There is a potential for severe weather on Wednesday, and I will keep everyone updated by email and facebook, if it is going to impact our being there.
Beginning next week, New Zagros will be at markets in Durham, Dover and Exeter every week for the remainder of the season!!
There is lots of good news from the new kitchen! I am still struggling a little bit with getting the Anadama perfect, however this week saw a very good version. The hydration on the multigrain is being very particular, because all of the whole grains are soaked overnight to virtually eliminate the phytic acid, so all those vitamins and minerals are available for your body to assimilate! Although the flavor is amazing, it is not yet perfect - We shall not be deterred!
I will keep working on developing the recipe transitions to perfection!! There is a lot to share though! Very importantly, the English muffins and their starter, "Seymour" love their new home and continue to bless us with magnitudes of deliciousness!!
New Zagros welcomed our first visitors to the new kitchen, Alex and Harshavya!
Harshavya is a huge fan of challah....
..and I am so happy to say, we have figured out the transition for all its versions!
Sourdoughs continue to exceed expectations, however I am going to have to have some custom baking sheets and pans made in order to scale production....
In the meantime, we will endeavor with the tools we have! Product insanity alert!!!! The following was born of a windfall of local sour cherries, and there are 3 loaves ($15) available for clients this week - I had to test the 4th loaf, and it is just insane!! Here then is the Belgian chocolate, sour cherry sourdough....
...this is over 2 pounds of gastronomical euphoria that may be banned in certain states or require a minimum age in order to purchase!!!! Check with your local authorities!Emoji Toasted with butter and sea salt, this bread sent this baker to nirvana!!!
Last but certainly not least, the Nan Zeytoon (kalamata olive sourdough) was again subject to quality approval inspection, and passed with flying colors, so it has the PWLB seal of approval (PWLB - people who love bread!!)
Thank you all for supporting this fantastically inspiring journey!! I will keep you posted regarding Wednesday's weather and our attendance, but in the meantime enjoy great local foods, fine friends and family and we will see you .......
