Heritage French Chicken available now.
We only kept a few whole birds fresh for the weekend before the rest went into the freezer.
These chickens were harvested last week, shipped fresh, and stayed fresh the entire way here. If this is your first time cooking one of these birds, this is a completely different experience than the commodity chicken most people are used to buying at grocery stores. This is a slow-grown French heritage breed raised specifically for flavor, texture, and cooking performance rather than rapid growth and industrial efficiency.
A big part of what makes this program different is the production standard behind it.
Our Poulet Rouge® French Chickens from Joyce Farms are raised according to French Label Rouge guidelines, which are built around traditional poultry production methods focused on eating quality.

The older style barns are actually part of the requirement for this program. The entire production system is intentionally built around allowing chickens to behave like chickens instead of forcing maximum production efficiency.
