The perfect, fresh, and filling salad for summer! This basil orzo pasta salad will be your new favorite go-to lunch!

Ingredients:

1 Pkg Orzo pasta cooked as directed
1/2 cup sun-dried tomatoes, finely chopped
8 oz of basil, chopped
1/2 cup sliced kalamata olives
1 block of tofu, baked with our Lemon Herb Seasoning
Juice of 1 lemon
1/4 cup vegan parmesan
Vegan feta (optional)
Salt to taste

Instruction:
1. Cook orzo pasta according to package instructions.
2. Pat dry your tofu, cut into cubes, and season with oil and our lemon herb seasoning.
3. Bake for 20 minutes until golden and crispy.
4. Add basil, sundried tomatoes, olives, and tofu to the cooked orzo.
5. Squeeze lemon juice, add feta, and sprinkle with vegan parmesan.
6. Mix until all is well incorporated and enjoy!

This gluten-free seed bread is made with simple pantry ingredients like oats, chia seeds, flax seeds, and pumpkin seeds to create a hearty loaf packed with texture and nourishing goodness.

With its rustic appearance and crunchy yet soft interior from the mixed seeds, this bread is perfect for everything from morning toast to savory sandwiches. It’s naturally gluten-free, easy to prepare, and requires no yeast or kneading. Just mix the ingredients, let the mixture rest, and bake!

Ingredients:
2 cups rolled oats
2 tbsp chia seeds
2 tbsp psyllium husk
2 tbsp flax seeds
2 tbsp sunflower seeds
2 tbsp pumpkin seeds
2 cups lukewarm water
1/2 tsp salt

Instructions:
1. Line an 8½ x 4½ inch bread tin with parchment paper.
2. Add all of the ingredients to a large mixing bowl and mix well.
3. Place the mixture in the bread tin and allow it to sit for two hours.
4. Bake in a preheated oven at 356°F for 30 minutes.
5. After 30 minutes, take the loaf out of the bread tin and bake for another 20 minutes.
6. Allow to cool completely before eating.

In the fifth week of our 8-week health challenge, the battle was all in the mind. Our focus was on practicing temperance.

When you learn to master your own choices, you gain the power to transform your health and, ultimately, your life.

The truth is, we have complete control over what we eat. No one is forcing us to consume foods that drain our energy or compromise our well-being. Still, despite knowing that highly processed and artificial foods can lead to shorter lifespans and health complications, many of us continue to reach for them out of habit, convenience, or cravings.
