I have not made it to the grocery store in a bit. I was trying to think of a healthy meal for the family with what I had on hand. Cue eggs, frozen microgreens & some other spices. This quiche filling went from humdrum to heavenly!

Happy Easter! Our brunch featured another recipe modified with MicroGreens! We also used brioche bread instead of onion rolls because that is what was on hand. We put Broccoli MicroGreens in the egg mix instead of chives and also sprinkled them on top!

Did you know that the Sow Good Greens team teaches 5th grade in our other lives? We are getting ready for an exciting field trip before spring break. Of course, greens are on the picnic lunch menu! Sunflower & broccoli add the perfect crunch & flavor to any sandwich. They also bring so many nutrients to your lunch than traditional lettuces do! Win, win!
