Tasteful Noods: Fresh-Made Noodles & Pasta Locally-made fresh pastas, available at farmers markets, seasonal events, or by special order! Other Black Hills Farmer's Markets may follow if all goes well.

The Tasteful Noods kitchen is run by Laura Floyd, who is the proud (if slightly over-prepared) owner of a SD Home Food Safety certificate. That is to say, anything you buy here "was not produced in a commercial kitchen. It has been home-processed in a kitchen that may also process common food allergens such as tree nuts, peanuts, eggs, soy, wheat, milk, fish, and crustacean shellfish." /legalese

As of July 2023, we are just getting the business off the ground. We intend to start appearing at the Rapid City Farmer's Market on August 6, and regularly on Saturdays thereafter. Hopefully we'll come up with a system where you can pre-order noods for pickup, or just turn up and see what we have in stock! Immediately, we'll be stocking traditional wide egg noodles and white noodles for those who prefer to eat vegan or simply want a slightly lighter nood. Spaghetti is likely to follow, and the stretch goal for opening day is vegetable-dyed rainbow pastas.

LASAGNA!! This is the first time we’ve made lasagna in a couple months, and it’s one of my favorite projects (also: favorite foods). We’ll have lots of 9x13”-sized packages at the Black Hills Farmers Market tomorrow from 8-1!

Question: would anyone prefer to have their lasagna in full sheets, rather than the traditional ruffle-edged strips? We could call it Rustic Lasagna and I would totally charge less because ruffles are work. 😅

We're back, baby! The Nood Lab is up and running again, and we're so excited to be getting into some of our fall favorites. Our next appearance will be at the Black Hills Farmers Market next Saturday (the 5th), and that is LASAGNA NOODS week! We are always grateful if you give us a shout ahead of time if you'd like Lasagna Noods so we know how many to bring. They come in Regular Size (9x13 pan, 3 layers, $8) and XL Size (10x16 pan, 4 layers, $12).

The online shop will be up and running in a day or two - stand by for confirmation.

Happy Third Noodaversary to us!! We've been so crazy busy, we forgot to remember this milestone in time to celebrate at the market, but the festive occasion must not pass unnoticed!

In fact, we're celebrating this year by taking a little hiatus. We will not be back at the Black Hills Farmer's Market until September 5. If you'd like to get your hands on some Noods before then, you have until this Thursday, August 6, to place an online order for pick-up at our Nood Lab. All orders MUST be picked up no later than Friday, August 7.

We're a little short on long Sourdoughs, but we've got ALL sorts of your favorites still available, AND a $1 off any Fresh Noods purchased with the code NOODAVERSARY as a thank you for sticking with us these three years!

We don’t know why the sun keeps singling out weekends to do its dirtiest, but we will be toughing it out at the Black Hills Farmers Market tomorrow until NOON. (Please note: in deference to the temperatures, the whole market is officially closing at noon this week.) Come early to get in on all the best produce and my Zoods! (Seriously… come early. I only have four packages. Garden hasn’t quite hit its stride yet. 😅)

My last few packages of Red White & Blues will be on sale, and we’re well stocked on rainbows and sourdough!

We survived Festival in the Park, and now it's on to planning for the rest of the year! I think we have some exciting new locations we hope to pop up over the Fall, but before we get ahead of ourselves, here's the schedule for the next couple months. We're looking forward to seeing you at the Black Hills Farmers Market and Friday Farmers Market in Gordon Park over the next couple weeks! Then we're taking a bit of a break, and we'll be back in September.

Spent a little time today (okay a lot of time today) spiffing up my signs in preparation for Festival in the Park this weekend. Turns out rainbow font is a heck of a lot harder to produce than Rainbow Noods. Of which I have made approximately sixty billion this month. Please come buy some and tell me how pretty my sign is! Look. I know a lot about noodles. Like, really a lot. I know so much that sometimes I think to myself, "you don't have to obey the Nood Rools. You are good enough and smart enough to try something new and wacky!"

Today I learned the hard way (so you don't have to): YOU CANNOT SUBSTITUTE FRESH RAMEN INTO A ONE-POT RECIPE THAT CALLS FOR DRIED RAMEN. YOU CANNOT.

"Just cut down the cooking time!" she thought. "The potato starch on the noods will add a little body to the sauce!" she thought. "We'll just stir more times than the recipe calls for!" she thought.

I am sorry I didn't think to take a photo of the gloppy, gelatinous mess that should have been my dinner while it was still in the pot. The horror it evoked in my soul caused me to forget I'm supposed to be documenting my fabulous boffs.

Friends: FRESH RAMEN MUST BE DRAINED AND RINSED. There is no case in which this is not true. Most of my fresh (Italian-style) noodles should NOT be rinsed. Ramen and Udon MUST be rinsed. They are coated in potato starch before packaging to keep the more-hydrated dough from sticking to itself. That starch has *body*, and we're not talking "enhance your sauce" body.

If you're still reading and curious: I did not wind up having pizza for dinner, though it was close. I took out the biggest clumps (see photo), then rinsed the whole gelatinous mess in a colander, and started the recipe over again. I do not recommend this on either a time-well-spent or delicious-dinner basis. The result was edible but not at all worthy of the magnificence that fresh ramen has the potential to be.
