The Vita Sana Olive Oil Company is Charles and Merry Jane Walsh's latest family owned business in direct response to their customers requests. The first location opened in Casper, Wyoming in September 2012, and the newest location in Rapid City, South Dakota in July 2013. The Walsh's love of Extra Virgin Olive Oil and the pursuit of the freshest high quality Olive Oil led them to open the store which imports seasonally according to the crush date of the olive oil. They offer the freshest single variety extra virgin olive oils available from both the northern and southern hemispheres. They also carry many different fused and infused extra virgin olive oils. The unique tasting bar format allows customers to have the opportunity to taste and compare over 50 varieties of the finest imported extra virgin olive oils and balsamic vinegars. Each variety is stored in stainless steel Fustis from Italy to preserve and protect the individual flavors and provide incredibly fresh olive oils and balsamic vinegars. The olives are grown and pressed by small artisans and farmers from around the world. Their balsamic vinegars are harvested in Modena, Italy, and produced in the traditional Modena style which ages them in wooden barrels for up to 18 years. None of the olive oils and balsamic vinegars contain any preservatives, chemicals or additives in order to provide you with the best product possible! Charles and Merry Jane strongly believe that olive oil is like fruit juice: highly perishable, healthier and more flavorful when consumed fresh. This is one of the reasons why they post the harvest date on the oils offered at Vita Sana. In addition to the harvest date, they are extremely fanatical when it comes to the chemistry of the olive oils. The chemistry of a specific oil can tell you many things. By testing the oil, you can learn the antioxidant value, the measurement which dictates the flavor intensity, to whether it is suitable for high heat cooking based on its unique free fatty acid measurement and fruit condition. The oleic acid is also measured in the oils which gauges the amount of healthy monounsaturated fat in the Olive Oil. Vita Sana also carries a variety of sea salts, spices, pastas, wine and unique gifts!

Chocolate mousse... with OLIVE OIL?! 👀

Yes, truly! And believe us, it does work.

Olive Oil Chocolate Mousse

Ingredients:
6 oz dark chocolate, chopped
1 cup heavy cream
2 tbsp extra-virgin olive oil
1 tbsp honey
Pinch of sea salt

Directions:

1. Melt the chocolate and then allow it to cool a little.
2. Beat the heavy cream until soft peaks appear.
3. Take the whipped cream and gently fold in the chocolate, olive oil, honey, and sea salt.
4. Put the spoonfuls into the serving dishes and then chill them for at least 2 hours.
5. Serve the dish with some fresh berries and a small amount of olive oil.

What the result is: rich, silky, chocolatey, with a delightful fruity aftertaste. ❤

Vita Sana Taste Tour: Caprese Edition!

Today’s tour has three fresh and flavorful stops:

STOP ONE: Basil Olive Oil
STOP TWO: Traditional Balsamic
STOP THREE: Fresh Mozzarella

Start by laying down some fresh mozzarella, then add slices of tomato; after that, pour on basil olive oil and traditional balsamic. Finally, season with some cracked pepper and a couple of fresh basil leaves.

It is fresh, savoury, tangy and very easy to put together.

Today’s tasting adventure has three new stops:

Sprinkle the blood orange olive oil and mango balsamic over the sliced avocado and then add a little bit of sea salt and some cracked pepper.

Should you put balsamic in your drink? Believe us about this.

Here's the Strawberry Balsamic Sparkler: it's fruity, refreshing, bubbly, and rather unexpected.

You’ll need:
3–4 fresh strawberries
1–2 tsp strawberry, raspberry, or traditional balsamic
1 tsp honey or simple syrup
Ice
Sparkling water
Fresh mint or basil
Optional squeeze of lime

Muddle the strawberries using the balsamic and honey, add the ice, pour in the sparkling water, and then stir it.

This is a simple way to turn your preferred balsamic into a pleasant drink for the end of summer.

Yes, I'd take brownies made with olive oil.

These fudgy brownies made with olive oil are rich, chocolatey, and very easy to prepare. Replacing the butter with olive oil results in a smooth texture and gives each mouthful a bit more depth.

Cover them with fine sea salt, serve them with some fresh berries, or eat them warm directly from the pan. 😍

You’ll need:
½ cup extra virgin olive oil
1 cup sugar
2 eggs
1 tsp vanilla
½ cup cocoa powder
¾ cup flour
¼ tsp salt
½ cup chocolate chips

Combine all the ingredients, pour the mixture into an 8x8 pan, and bake it at 350°F for approximately 22 to 27 minutes.
