Wine Wednesday! And it’s all about not being chicken and trying new things! Starting with the wine! Mousai, or Muse in Greek, is a fruit forward Pinot Noir from Chile. Notes of plum, cherry, and quince come through thanks to light tannins. This is a red that can be served room temp or 😱 chilled! Which is how we’re serving it today. Lightly chilled. We’re pairing it with the more polarizing of the cheese styles, but one we love! Blue cheese! And this particular blue is extra special. Boucher blue, a cow’s milk blue made by our friends Green Mountain Blue Cheese is an artisan Vermont blue that’s name means Butcher in French. It’s punchy, with a lovely peppery spice, crumbly while still creamy. Excellent on a burger, with steak, on a salad, or by itself with a drizzle of honey. We’re serving it on an Inés Rosales USA torta that complements the cheese’s salty punch with its light fennel sweetness. Come it for a taste and mix things up! 🍷
