Marbling in beef, the visible white flecks and streaks of intramuscular fat, is a primary indicator of quality, directly impacting the meat's flavor, tenderness, and juiciness.
Prime cuts of beef have abundant marbling, making it the highest grade beef available. Choice grades of beef are also high quality, but contain less marbling.
