🥩 Wet Aging vs. Dry Aging – What's the Difference? 🥩

If you've ever wondered why some steaks taste different, it might come down to how the beef is aged. At Brummel Beef, we get asked this a lot—so here's a quick breakdown:

🔹 Wet Aging

Beef is vacuum-sealed and aged in its own juices for 7–28 days

More moisture retained, so there's more product to sell

Mild flavor, slightly metallic or “bloody”

Common in grocery stores

🔸 Dry Aging

Beef is aged open to the air in a temperature- and humidity-controlled space for 10–14 days

Outer layer forms a crust and gets trimmed

Rich, nutty, concentrated flavor

Less yield, but big on taste

These are all cuts that come from the Rib primal of a beef. The rRbeye is the boneless option. The Ribsteak also know as the Bone-in Ribeye, Ribeye Steak, Cowboy Cut, Caveman Cut, and Tomahawk are versions of the bone in Ribeye Steak. The Ribroast also has many names including: Prime Rib, Standing Rib Roast, and Ribeye Roast. The famous Delmonico is another regional name for a Ribeye.
