Not every great steak comes from the loin.

The Flat Iron comes from the chuck and is one of those cuts that proves you don’t need a ribeye to have an incredible steak. Properly trimmed, it’s tender, richly marbled, and full of beefy flavor.

You’ll need a hot grill, good sear, and simple seasoning.
Then finish it with blistered garden tomatoes for the perfect summer plate.
