Hello everyone,
Due to a discussion on a couple of baking groups I follow, I wanted to post this info for anyone who might be considering opening a home bakery.
Right now, the only foods allowed to be sold from homes are strictly non-perishable items. This means that if the food requires refrigeration at ANY point in its life, it is not allowed to be sold.
This includes things like:
- Whipped cream frosting or filling
- German chocolate frosting
- Cream cheese frosting or filling
- Cheesecake
- Custard anything (Pies, fillings)
- Fresh fruits (Cake toppings or fillings)
- Chocolate-covered strawberries

Edited to add: There is a cookbook available on this site (not mine) with some NPH (non-potentially-hazardous) recipes for cream cheese frosting and coconut-pecan frosting! http://texascottagefoodlaw.com/Recipes
Please remember that this law took a LOT of work to pass. If you sell items that are on the "not allowed" list, you are undermining the hard work that was done by many people. You are also opening the door for criticism from people who oppose the law. Hopefully one day the law can be amended to allow a wider variety of yummy foods to be sold. Until then, please don't sell "illegal" foods.
