Our new plant processes are almost fully ready to go!

It’s been a long process, but over the past year we’ve recommissioned Dairy State Cheese with new vats, new towers, new piping (almost everything was tweaked our upgraded in some way), and when it’s fully running, we’ll be processing 3 million pounds of milk a day.

That’s about 240,000 pounds of Parmesan daily! And just shy of 90 million pounds a year!

The best part though? It’s fully sustainable with every bit of milk that comes through being used completely (cheese, whey powder, animal feed, reusable water for cleaning, and even methane gas to power our own boilers).

We couldn’t be more excited to buy more milk from our local farms, create more jobs for the community, and run this state-of-the-art Parmesan plant! So, stay tuned in to see the changes soon!
