Here's another great spring treat, Carrot Cupcakes with Cinnamon Whipped Cream Cheese Frosting!

Make sure drop your cooking time to 20 minutes, and finely shred your carrots using a zester.
For the icing, combine 3 containers of Save A Lot's Coburn Farms Whipped Cream Cheese with 3 cups of our Ginger Evans Powdered Sugar, and 1/4 tsp of Marcum Cinnamon. Use a mixer to ensure the icing is light and fluffy. In a separate bowl mix together 1/4 cup of powdered sugar, and a tbsp of cinnamon then sprinkle those over the icing.
Your finished product will be a light, and super moist cupcake that everyone will enjoy!
