Recipe: Steak with Garlic Butter

Ingredients
½ cup butter

4 cloves garlic, minced

2 teaspoons garlic powder

4 pounds steak like top sirloin

salt and pepper to taste

Directions
Gather all ingredients. Preheat an outdoor grill for high heat and lightly oil the grate.

Melt butter in a small saucepan over medium-low heat.

Stir in minced garlic and garlic powder. Set aside.

Season both sides of each steak with salt and pepper.

Place steaks on preheated grill and cook 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F for medium doneness.

Transfer steaks to warmed plates; brush the tops liberally with garlic butter and allow to rest for 2 to 3 minutes before serving.

"Noggle Farms is located on the edge of the beautiful Irish Hills of Southeastern Michigan. Our Family has been taking care of this land since the 1860s, raising a variety of field crops and livestock. Our farm has been focusing its efforts on beef cattle since the 1970s. We currently have a commercial Simmental-Angus cow-calf operation as well as a grain finishing lot, where we finish around 400 head of cattle each year. We purchase high quality cattle for our feedlot from other farmers, and they are generally Angus or Simmental influenced.
We are very proud of our land, our cattle, and our practices. All of our cattle are moved naturally on horseback or on foot. We pride ourselves on our humane handling. We believe in the phrase "if you want to move cattle fast, you have to move them slow." We practice rotational grazing for all of our cows to properly manage our pastures while getting the most use out of them each season as possible. Once our calves are weaned from their mothers in the fall, we finish them on a mixed ration of cracked corn, corn silage, distillers' grains, and mineral. They also have access to free choice hay and water. All of the hay and corn that we feed, we grow ourselves. We work very closely with a beef cattle nutritionist to ensure that our animals have a well-balanced diet while also growing more efficiently.
We want to keep raising cattle and farming this land as long as we can with hopes that our children will continue after are gone. It is important to us that we are good stewards to our land and to our cattle so that our future generations can be successful."

Recipe: Pulled Pork

Ingredients
3 tablespoons dry barbecue rub, or more as needed

1 (3 1/2) pound bone-in pork shoulder blade roast

½ teaspoon liquid smoke flavoring, divided

1 cup water, divided

1 1/2 cups barbecue sauce, or as needed, divided

salt and freshly ground black pepper to taste

12 soft white hamburger buns

Directions
Preheat the oven to 210 degrees F

Sprinkle dry rub generously on all sides of the pork roast and place into a Dutch oven or heavy pot.

Divide liquid smoke between two 6-ounce ramekins; fill each with 1/2 cup water. Place ramekins in Dutch oven on either side of roast; cover.

Roast in the preheated oven until very tender, about 12 hours. Transfer roast onto a work surface (such as a cutting board); separate the meat from the bone using your fingers. Discard any large pieces of fat.

Roughly chop pork with a large knife or cleaver; drizzle with 3/4 cup barbecue sauce. Season with salt and black pepper.

Spread about 1 tablespoon barbecue sauce onto each bun; pile on pork to serve.

Learning Corner: Invasive Dame's Rocket

This invasive species is prolific at the moment! The beautiful purple and white flowers seen on the sides of country roads right now is squeezing out native species. Dame's Rocket creates a huge amount of easily germinating seeds, so it's necessary to pull them thoroughly for several seasons before they are eradicated. Typically, you are discouraged from picking wildflowers, but in this case, the best way to fight them is to pick them before they go to seed.
