Recipe of the Week - Hearty Ranch Chili with Cast Iron Cornbread
The Beef
- Brown 2 lbs. Ground Beef in a Dutch oven over medium-high heat until nicely browned. Drain excess grease if needed.
- Add diced onion, green bell pepper, and minced garlic. Cook 4–5 minutes until softened.
- Stir in chili powder, cumin, smoked paprika, oregano, salt, black pepper, and a pinch of cayenne. Toast the spices for 1 minute.
- Add diced tomatoes, tomato sauce, kidney beans, pinto beans, and a cup of beef broth.
- Simmer uncovered for 45–60 minutes, stirring occasionally until thick and rich.
- Serve topped with shredded cheddar, sour cream, sliced green onions, and fresh jalapeños if you like a little heat.
The Plate
- Cast iron skillet cornbread served warm with butter and a drizzle of honey.
- Finish with extra shredded cheese and a few crushed tortilla chips for added crunch.
