Do you like Fresh From the field Hatch Chiles? I do and for many many years I've been buying them from a 5 generation Hatch Chili farmers in Hatch Valley, New Mexico. Big Jim and Charger varieties, are prized for their meaty texture, smoky flavor, and perfect balance of heat. These chiles are a seasonal favorite, freshly harvested and shipped to my door by air from the field for a true farm-to-table experience.
Flavor Profile of Medium Hatch Chile: Medium heat: 2,500–4,000 SHU → enough spice for flavor without overwhelming., Sweet, earthy, and smoky with Hatch’s unique growing conditions. Thick walls → perfect for making roasted Hatch green chile at home.
