Fried Crab Legs

2-3 King Crab Legs
1-2 cups of Flour
salt
black pepper
paprika
Onion powder
Garlic powder
Celia’s seasonings Seafood by the bay OR old bay seasoning
1 cup of sparkling water or beer

Make sure to take some shears and go against the shell and cut and make sure to keep your crab legs whole. Make sure you get all of the meat out of the shell

Dry batter

Take 2 cups of flour, add 1 tsp of salt, black pepper, paprika, onion powder & garlic powder and seafood by the bay/old bay seasoning and mix well and set aside

Wet batter

In a bowl, add one cup of sparkling water or beer and add 1 tsp of hot sauce, black pepper, paprika, onion powder, garlic powder and seafood by the bay or old bay seasoning. Mix well. Mix until it is a smooth consistency and set aside

Heat your fryer to 350 degrees, coat king crab legs into flour and then into wet batter and add to fryer and fry for 5-7 minutes until golden brown. Remove and add to paper towel to remove excess oil.

**Sauce**
1 cup of mayonnaise
2 tbsp of Dijon mustard
1 tsp of paprika
1 tsp of seafood by the bay seasoning or old bay seasoning
1 tsp garlic powder
1 tsp of hot sauce
1-2 tbsp of lemon juice
1 tsp of Worcestershire sauce
Tsp of salt
Tsp of black pepper

Mix all ingredients until a smooth consistency, add parsley for additional flavor.

Apple Pie Funnel Cake

Oil for frying
3/4 cup of milk
2 large eggs
3 tablespoons of sugar
1 tsp vanilla extract
1 3/4 all purpose flour
3/4 tsp baking powder
1/2 tsp salt
1/2 cup Powdered sugar

Apple pie filling
2 apples (sliced)
1 stick of butter
2 cups of sugar
1 Tbs cornstarch/2 Tbs of cold water

Homemade whipped cream
1 cup heavy whipping cream
2 cups powdered sugar
1 tsp vanilla extract
Cream of tartar

Place pan over medium high heat, add apples, stick of butter and two cups of sugar. Continue to stir until apples become soft to your desire. Take 1 tablespoon of corn starch and 2 tablespoons of cold water and stir cornstarch mixture and pour into pan. Continue to stir until thickens. Set aside.

Using a mixer, add mixing bowl and mixing utensil to freezer for 10-15 mins until chilled. Add heavy whipping cream, sugar, vanilla extract and cream of tartar. Mix on medium to high speed for 5-7 mins until light and fluffy. Make sure not to overmix. Place in refrigerator or set aside.

Wet mixture

Add milk, eggs, sugar and vanilla extract to a bowl
Whisk the wet ingredients together

Dry mixture

Add flour, baking powder & salt to wet ingredients. Whisk to combine

Heat oil to 350-375 degrees

Scoop about 1/3 cup of batter into a funnel and drizzle the batter into the hot oil in a circular or swirling motion, creating a 6-inch round.

Fry until golden brown

Remove from oil and drain

Dust with powdered sugar, add apple filling, add whipped cream and caramel drizzle (if any) and top with powdered sugar. Happy New Year!

Beef Tips & Rice

1 tbs olive oil (to coat pan)
1 lbs grass fed beef tips
1 Tbs Butter (Unsalted)
1 medium diced onion
Medium red and yellow bell pepper
3 Tbs minced garlic
1 tsp salt
1 tsp black pepper
1 tsp onion powder
1 tsp garlic powder
1 tsp oregano
1/2 tsp sage
1/2 tsp thyme
1 cup of beef or chicken stock
1 tsp A-1 steak sauce or Worcestershire sauce
2 bay leafs
1/4 cup cornstarch (1 tbs of cold water to thicken)

Season meat with olive oil, salt, black pepper, onion powder, garlic powder, oregano, sage & thyme and A-1/Worcestershire sauce and set aside.

Melt butter and add a little olive oil so the butter won’t burn.
Add onions and sauté till translucent and tender. Add minced garlic and cook until flagrant (add oil if needed to prevent garlic from burning)
Remove onions and garlic and set aside
Add meat on a medium high heat non stick skillet
Make sure the meat is brown and slightly crisp
Remove beef from pan
Pour 1/2 cup of beef or chicken stock into pan and de-glaze any meat pieces stuck to pan.
Add remaining broth and season to taste with black pepper, onion powder, garlic powder, oregano, sage & thyme.
Simmer for 10-15 mins
Add in beef and bay leafs.
Cover and let simmer for 60-90 minutes till beef is tender
To thicken gravy, add 1 Tbs of cold water and 1/4 cup of cornstarch and create a slurry mixture in a different bowl
Pour the mixture into the pan and stir.
Cover and simmer for an additional 5-10 minutes.
Taste and add additional seasonings if needed. Serve over hot rice.
