An easy, step by step guide (with pictures!) to help get a start on that awesome bunch of lemongrass in our farm boxes this week!

Lemongrass is a confusing ingredient to work with. If you use it wrong, you could end up with stringy bits in your meal. Here is how I use it to extract maximum flavor while keeping a texture I enjoy in the final dish.

TURNIPS!

Every season we here at Squeeze Play! get lots of questions as to what to do with these lovelies...In case you'd like some ideas, here are some of Squeeze Play's favorites.

One go-to: Wherever you might use potatoes or kale, use turnips or turnip greens instead!

Roast Turnip Greens- like kale chips

Turnip Greens- add to sautés, quiches, scrambles, soups, and stews

Roast Turnips- a little olive oil, salt and pepper- either on their own or with other root veggies

Turnip Fries- fry, bake, or roast turnip wedges and season with your favorite french-fry toppings: chili, season salt, garlic, parmesan cheese, etc.

Mashed Turnips- boil and mash turnips on their own or with potatoes, cauliflower, parsnips, etc to make an even more nutrient rich version of classic mashed potatoes

Blend Turnips- substitute or add turnips to your favorite creamy soup recipes

Turnips in Stews- Turnips love crock pots, slow cookers, and stew time!

Sneaky Turnips- boil and mash or blend turnips and 'sneak' this creamy mixture into other dishes so the nutrients get in, but no one knows! Brownie recipes, cakes, pancakes, and of course macaroni and cheese!

Turnips and Candles- carve the top out of a turnip, trim the bottom so it sits flat, and pop a votive in it for a sweet, rustic candle holder, or carve a large turnip like a small jack-o-lantern!

Kohl…? What? Kohlrabi!
“Kohl” meaning cabbage & “Rabi” meaning turnip is at the top of the list of “unusual, CSA” type of vegetable. It’s often described as a flying saucer look alike. To no surprise KMK Organic Farms is growing it and offering both green and purple Kohlrabi in the add-on section currently and for future weeks to come!

Tips on Kohlrabi
* to store kohrabi: in a bag in the fridge
* A favorite way to eat truly fresh kohlrabi is to peel (like a potato, Andy doesn't peel his but I like to.) The kohlrabi, slice it like you would jicama or carrots for a dip tray, and then eat the raw pieces plain or with lemon juice. The kohlrabi is fresh so it's sweet, and has none of that strong cabbage smell old brassicas can have.

* Cooking tips:
* Kohlrabi doesn't have to be peeled after cooking.
* It's excellent cooked or raw. Try it both ways.
* Grate kohlrabi into salads, or make a non-traditional coleslaw with grated kohlrabi and radish, chopped parsley, green onion, and dressing of your choice.
* Try raw kohlrabi, thinly sliced, alone or with a dip. Peel and eat raw like an apple.

* Steam kohlrabi whole, 25-30 minutes, or thinly sliced, 5-10 minutes. Dress slices simply with oil, lemon juice and a fresh herb, or dip in flour and briefly fry.
* Saute grated kohlrabi in butter, add herbs or curry.
* Add sliced or cubed kohlrabi to heart soups, stews or a mixed vegetable stir-fry.

* Chill and marinate cooked for a summer salad. Add fresh herbs.
* Kohlrabi leaves can be used like other greens. Store the leaves and bulbs separately. The globe will last for a few weeks in plastic in the fridge.
