hellfish, we specialize mainly in wild species found along the West Coast, from Baja and Southern California up into the Pacific Northwest. We also strategically source responsibly farmed fish from around the world, such as Baja Seas Hiramasa and Mt. Cook Alpine Salmon. Nearly 75% of the seafood we sell is sustainable, and much of that is sushi grade. In 2012, we expanded by opening our Seafood Education and Nutrition Center featuring a walk-in fish market and demo kitchen.
