Ingredients
Crust
• 1 cup almond flour – Just About Foods
• 1⁄2 cup oat flour – Just About Foods
• 2 tablespoons honey
• 3 tablespoons melted coconut oil
• Pinch of salt
Frozen Lemon Cheesecake Filling
• 1 cup cottage cheese
• 1⁄2 cup Greek yogurt
• 1⁄4 cup honey
• Juice of 2 lemons
• Zest of 1 lemon
• 1 teaspoon vanilla extract
• 2 tablespoons chia seeds – Just About Foods
Instructions
Crust
1. Mix all crust ingredients until a moist, crumbly texture forms.
2. Press firmly into the bottom of a pan.
3. Freeze for 15–20 minutes.
Filling
1. Add all filling ingredients to a blender.
2. Blend until completely smooth and creamy.
3. Pour the filling over the chilled crust.
4. Freeze for 3–4 hours, or until firm.
Before Serving
• Remove from the freezer 10–15 minutes before serving for the perfect creamy texture.
