These unique scallops, in spanish “Callos de Hacha”, are named after their half-moon shape and should be eaten raw. They are best eaten thinly sliced as sashimi and they are perfect for ceviche, aguachiles and mariscadas. We don't recommend cooking them, but if you must, do a quick 10-second sear on high at most. The best callo from Mexico!

Our Groupers are caught off of the mexican coast. They have very mild and firm meat with a sweet flavor. The Grouper doesn’t need much seasoning, because it is delicious on it’s own. We strongly recommend you to be prepared with garlic, pepper and olive oil. Bon appétit!
