🍄‍🟫Morel season is winding down, but we should still be seeing beautiful fresh morels for the next couple of weeks!

As the season progresses, our harvest has moved a bit farther north, and we’re now sourcing most of our morels from Oregon. These wild treasures won’t be around for much longer, so now is the time to enjoy their rich, earthy flavor while they’re still in season.

Three generations deep and growing strong 🍄‍🟫🎓

This year we’re celebrating some incredible milestones in our Far West Fungi family, and we couldn’t be more proud of these 3rd generation kids and all they’ve accomplished.

✨ Owen earned his AA
✨ Abby is graduating High School and heading off to College
✨ Adysen is graduating 8th grade and on to High School
✨ Cousin Josh recently graduated from CSU

From mushroom adventures as little kids to chasing big dreams as young adults, it’s been amazing watching them grow, learn, and become who they are today. We can’t wait to see what these young people learn, create, and contribute to the world next. ❤️🍄‍🟫

Nothing says SPRING like a mushroom & pea pasta… 🌿

Ingredients:
- pink oyster mushrooms
- fresh peas
- rigatoni pasta
- olive oil
- garlic
- onion
- white wine
- whole milk
- flour to thicken
- Parmesan cheese
- lemon zest
- salt & pepper to taste (I add a pinch of red pepper flakes for a little 🔥)

Cook pasta in salted water per in instructions on package. Heat oil in a skillet and cook mushrooms for 3-5 minutes until brown. Remove from pan and set aside. Cook onion and garlic to the pan with a little flour. Cook for a few additional minutes until soft and fragrant. Stir in milk and white wine. Bring to simmer. Add parmesan cheese and peas and cook for an additional 2 minutes. Mix noodles, mushrooms, sauce and garnish with lemon zest. Salt & Pepper to taste.
