Our annual San Francisco team appreciation party was a success!! We spent the day at Hilltop Park with our families, ate plenty of great seafood and provisions, and celebrated the people who make Four Star what it is.

There’s a lot that happens between seafood arriving at our doors and making its way to restaurants and homes across the Bay Area. It takes our buyers, drivers, warehouse crew, sales team, operations, and everyone behind the scenes to make it happen every day.

Thank you to the whole Four Star crew for everything you put into it. We were happy to get everyone together and celebrate you!!

Matt Hogg’s local albacore is back!!!! He also brought us some local bluefin.

Caught aboard the F/V Reel Hogg off the Northern California coast, Matt catches these fish one at a time by rod and reel, then uses shinkei jime to preserve the quality of the fish from the moment it comes out of the water.

We’ve worked with Matt for years, and his catches are always the fish that we look forward to seeing come through the door.

This is a fish that you’ll want to use for Crudo!!

Meet Captain Puria Kashmiri of Bluewater Fresh Fish, part of our Southern California fleet!! Bluewater Fresh Fish

He’s a small boat fisherman who runs his operation out of SoCal. Everything he brings us is local and line caught, processed to ike jime and shinkei jime standards, then delivered direct to us for LA chefs. Here’s him and his uncle with the California halibut they catch for Four Star.

California halibut can be caught in local waters year round, with no closed season. It’s a sandy bottom ambush predator, most common from central California down through Baja, blending into the seafloor to ambush prey.

This afternoon, Ron Sannes and the crew of the F/V Fortuna landed some LOCAL CHUB MACKEREL just off Redondo Beach. Pictured here, today’s catch coming off the boat only a few hours after leaving the water, representing exactly the standard of fresh, locally sourced seafood we love to serve.

Southern California waters produce mackerel with an incredibly rich, oil-dense profile and a clean, savory flavor that you only experience when it’s caught this close to home. That high fat content makes it an exceptional fish to work with, standing up perfectly to a delicate cure or a hard sear over the coals.

This catch is available in Southern California now as part of our local fish program, alongside other species landed by the small boats we work with throughout the region.

Halibut from Yakutat comes from cold, remote waters in the Gulf of Alaska, fished by small day boats. This is one of the first relationships Adrian and Ishy built. We get a call when it lands, and it goes on a plane immediately. The fish is prized for its dense, clean flavor and firm white flesh, a result of the frigid water temperatures and the fishery’s strict size and quota limits. Because Yakutat boats are small and trips are short, the halibut is bled and iced quickly, which shows in the quality of the flesh.
