Porchetta is so special because of its delicious combination of flavors and textures. It’s made from a whole pork belly and loin, seasoned with aromatic herbs: rosemary, fennel, garlic, and citrus zest. Porchetta cooks best low and slow to render the fat, keep the meat juicy, and finish with a crispy crackling skin. It's definitely a show stopper for any holiday dinner table.

Olivier’s Butchery Tip

For extra crackling, pat the skin dry before cooking. If you want even more crisp, finish under the broiler for 1–2 minutes, watching closely so it doesn’t burn.
