We have a ton of new cheeses in the case, and Ray wants to show you a few!
Tomme Chebris: a combination of goat and sheep milk from Onetik, one of the Basque country's premier cheese makers.
Izar Tomme des Pyrenees: a Basque cow's milk cheese. Izar means "star" in the Basque language. This cheese is a deeply satisfying, crowd-pleasing choice at a great price. It is also made by Onetik!
Kaasfort Amsterdam: This gouda is aged in a former military bunker near the North Sea. It's a 36 month boerenkaas, which means it is a farmstead gouda, meaning the animals and cheese making are on the same property. Kaasfort Amsterdam purchases finished wheels and ages them to perfection. This cheese is deeply savory up front with a milky finish. It has some of those crunchy crystals we all love, too. Perfect for snack time.
18 month aged goat milk Gouda. Also from Kaasfort Amsterdam, this cheese has notes of salted caramel and lots of protein crystal crunch!
Mont des Cats. This French Trappist cheese is buttery, creamy, and well balanced with a soft. spongy texture. One of our current favorites! It is ever so lightly brine washed. It pairs really well with the Mont des Cats Trappist beer that we also carry.
