Directions
Cook 4 each sliced carrots and celery stalks in salted boiling water, 5 minutes. Add 1 1/2 cups frozen pearl onions; cook 1 more minute, then drain. Cook 2 tablespoons each butter and sugar, and the juice from 1/2 lemon in a skillet until syrupy. Toss in the vegetables and season with salt and pepper.

This easy side is the most delicious way to use up your summer vegetables.

INGREDIENTS:

1 lb. zucchini (about 3 medium), chopped
1 pt. cherry tomatoes, preferably multi-colored, halved

CHINESE CABBAGE / WOMBOK / NAPA CABBAGE

Napa cabbage is high in folic acid, vitamin C, and vitamin B, vitamin K, and antioxidants. It’s also low in calories and high in fibre. Napa cabbage is versatile; it’s great for stir-fries or stews meaning it can be cooked a little or a lot. You can also use it raw in a salad.

It’s slightly sweet in flavour and will soak up the taste of whatever ingredients are used to prepare it. It’s popular in many types of Asian cuisine such as Chinese and Korean dishes e.g. hot pot and kimchi. Perhaps you never made that particular wish, but I’m going to bet you’ll agree it’s a great idea. The answer (to the wish you never made) is here – Armenian cucumbers.

Armenian cucumbers aren’t true cucumbers like other varieties cultivated from the Cucumis sativus species. They are actually melons, cultivars of C. melo, just like honeydew and cantaloupe – but they taste and look like cucumbers.

Crosnes and Peas

Your hardest task will be to find crosnes. Large farmers markets will have them in fall and winter, as will specialty markets. Probably easier would be to buy crosnes online. If anyone can located a reliable source for the tubers (for growing), please let me know in the comments section. I like a little drizzle of Oregon White Truffle Oil on this dish, but you could use another truffle oil or just leave it out. I like it because it gives the dish an earthy, luxurious base note underneath the crunch of the crosnes and the brightness of the lemon and parsley.

Romanesco

This is probably one of the most interesting looking vegetables, with its intricate spiral patterns made up of many buds alternating in size. It originates from Italy and can also be called Romanesco Broccoli or Roman Cauliflower. It is part of the same edible flower family (Brassicas) as Broccoli, Cauliflower, Brussel Sprouts and Cabbage.

It can be prepared for recipes in the same way as Broccoli and Cauliflower, but will give a more distinct, earthy, nutty and mildly sweet flavour.
