RECIPE OF THE WEEK - Roasted Tomatillo Salsa: Smoky, salty, a little sweet and TAKES NO TIME. 🍅🍋🧅🧂

1 Basket Tomatillos - RED BARN FARM
1 Basket Heirloom Tomatoes - RED BARN FARM or CITY FARM SLO
1 Basket Onions - VELAZQUEZ FARMS
Pinch of Chimi Churri Season Salt - HOUSEHOLD BAKING CO.
A squeeze of lemon - DRAGON SPRING FARM

I have small children and a farm to manage so ALL of my recipe's are less than 10 ingredients and take no more than 20 mins of prep. This fresh summer salsa hits all of the flavor palate sensations. A little sweet, some smokiness, and lots of acid (my fav). You will have enough salsa for a family for 1-2 weeks or use as enchilada sauce. So much YUM!

PREP: Heat oven to 350. Toss tomatillos, tomatoes, onions on a baking sheet. Once oven is up to temp throw in for 10-15 mins. Remove and let cool 10 minutes. Toss all roasted ingredients into blender and blend until smoothish. Add chimi churri seasoned salt and squeeze in lemon to taste. 😋🤤
