Registration is now closed, and we’re excited to share our updated program. DPTC Director Dr. Carmen Licon and DPTC Research Fellow Dr. Baheeja Zaitoun will be joined by special guest speakers Carlos Cerda of DSM-Firmenich and Eric Meredith of Fromaginary.⁣

Yesterday, students in WVIT 400: Wine and Cheese Pairing presented their final projects, which challenged them to create and present a unique wine and cheese pairing that had not yet been explored in class.⁣

Working in six groups, students had the opportunity to sample six different wines and six cheeses selected by their classmates. Each group shared the reasoning behind their pairing, creating an engaging and interactive tasting experience for the class.⁣

A big thank you to Dr. Carmen Licon and Dr. Miguel Pedroza for an incredible quarter and a memorable course!⁣

Bonus: Dairy PCC grantee Stepladder Creamery was featured in one of the pairings with their spicy fromage blanc!⁣

Today, Cal Poly’s WVIT-400 “Wine and Cheese Pairing” class participated in a hands-on cheesemaking lab at the DPTC! Students learned the fundamentals of cheesemaking and had the opportunity to craft their own cheeses from start to finish.⁣

A big thank you to Dr. Carmen Licon, Dr. Miguel Pedroza, and Sam Bass for providing such a fun, interactive, and truly “Learn By Doing” experience!⁣
