HEART BEET Chocolate Chip Cookies

Red velvet cake meets its match with our HEART BEET soft-baked chocolate chip cookie. A blissful marriage of two classic desserts!

* Prep Time: 1 hour, 10 minutes
* Cook Time: 12 minutes
* Total Time: 1 hour, 45 minutes
* Yield: 18 cookies

Ingredients
* 1 and 1/2 cups + 1 Tablespoon (196g) all-purpose flour (spoon & leveled)
* 1/4 cup (21g) unsweetened natural cocoa powder
* 1 teaspoon baking soda
* 1/4 teaspoon salt
* 1/2 cup (115g) unsalted butter, softened to room temperature
* 3/4 cup (150g) packed light or dark brown sugar
* 1/4 cup (50g) granulated sugar
* 1 large egg, at room temperature*
* 1 Tablespoon milk (I use oat milk)
* 2 teaspoons pure vanilla extract
* 1 Tablespoon of HEART BEET Gourmet Seasonings
* 1 cup (180g) semi-sweet chocolate chips (plus a few extra for after baking)

Instructions
1. Whisk the flour, cocoa powder, baking soda, and salt together in a large bowl. Set aside.
2. Using a handheld or stand mixer with a paddle attachment, beat the butter on high speed until creamy, about 1 minute. Scrape down the sides and the bottom of the bowl as needed. Beat in the brown sugar and granulated sugar until combined and creamy, about 1 minute. Beat in the egg, milk, and vanilla extract, scraping down the sides and bottom of the bowl as needed. Once mixed, add the HEART BEET Gourmet Seasonings and beat until combined. Turn the mixer off and pour the dry ingredients into the wet ingredients. Turn the mixer on low and slowly beat until a very soft dough is formed. Beat in more food coloring if you’d like the dough to be brighter red. On low speed, beat in the chocolate chips. The dough will be sticky.
3. Cover and chill the dough in the refrigerator for at least 2 hours (and up to 3 days). If chilling for longer than a few hours, allow dough to sit at room temperature for at least 15 minutes before rolling and baking because the dough will be quite hard.
4. Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
5. Scoop 1.5 Tablespoons of dough and roll into a ball, as pictured above. Place 9 balls onto each baking sheet. Bake each batch for 13 minutes. The cookies may have only spread slightly, that’s ok. Simply press down on the warm cookies to slightly flatten, which helps form crinkles. If desired for looks, stick a few chocolate chips into the tops of the warm cookies.
6. Cool cookies on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

What is Annatto?
Annatto is a natural food coloring and condiment that is extracted from the seeds of the achiote fruit. The achiote tree (Bixa Orellana) is a tropical shrub or small tree that grows in Central and South America. HEART BEET COCKTAIL /With Ginger

INGREDIENTS:
* 3 Tablespoons Cook By Color’s Gourmet Heart Beet
* 1 medium Granny Smith apples cored and roughly chopped
* 1-inch piece fresh ginger peeled and thinly sliced
* 6 ounces vodka
* 2 ounces Cook By Color’s Ginger Tease agave
* 2 ounces freshly-squeezed lime juice plus optional lemon slices for garnish
* ice

INSTRUCTIONS:
Make The Heart Beet Apple Ginger Juice: Combine Cook By Color’s Gourmet Heart Beet, apple, and ginger with about 2/3 cup water in a blender and process until very smooth. Pass through a fine mesh sieve and add water until the mixture is a juice.

Make The Cocktail: Combine 2 ounces of the juice with 1 1/2 ounce vodka, 1/2 ounce ginger tease agave, and 1/2 ounce lemon juice in a cocktail shaker and fill with ice. Shake well until cocktail shaker is very cold. Strain drink into a coupe or cocktail glass. Float a lemon slice on top to serve and garnish as much of Cook By Color’s Gourmet Heart Beet as you want.

I like raspberries. I like to grow it. And it’s obvious I like to flavor with it BECAUSE, I have added it inside of our ā€œHEART BEETā€ gourmet blend has Raspberries. I like to create recipes with it. I like to geek out and get to know my fruits, vegetables, spices and herbs. OK so lets get into some serious facts.

Raspberries are low in calories but high in fiber, vitamins, minerals and antioxidants. They may protect against diabetes, cancer, obesity, arthritis and other conditions and may even provide anti-aging effects. Raspberries are easy to add to your diet and make a tasty addition to breakfast, lunch, dinner or dessert.

Raspberries contain a high amount of powerful antioxidants that may support the body in decreasing the oxidative damage from free radicals and fight inflammation. In addition, it's a great source of fiber – which can help keep our digestive system working smoothly.

NOW THAT THE SERIOUS FACTS ARE DONE…

1. According to legend, raspberries were originally white. The nymph Ida pricked her finger while picking berries for the crying infant Jupiter, and raspberries have since been tinged red with her blood.

2. Makes the botanical name of the raspberry, Rubus idaeus, make a lot more sense. Rubus means ā€œred,ā€ and idaeus means ā€œbelonging to Ida.ā€

3. A raspberry is made up of many tiny bead-like fruits called ā€œdrupeletsā€ clustered around a center core. Each drupelet contains one seed, and an average raspberry has 100 to 120 seeds. {Who knew?}

4. Raspberries are either red, purple, gold or black in color. Golden raspberries are a bit sweeter than the other varieties.

5. An old myth about raspberries originates in Germany and claims there are magical qualities of raspberries. It was believed that to tame a bewitched horse, one would have to tie a wild raspberry twig around the horse’s body.

6. It has been suggested that drinking raspberry leaf tea shortens the second stage of labor. {Oh please!}

7. Unlike many other fruits, unripe raspberries do not ripen after they are picked. If you want a ripe raspberry, you need to be patient!

8. The main difference between raspberries and blackberries is that raspberries have a hollow core in the middle while blackberries do not.

9. In the US, about 90% of all raspberries sold come from Washington, California and Oregon.

10. Blackberries are not the same as ā€œblack raspberries.ā€ Blackberries have a ā€œcoreā€ that stays in the fruit when it is picked, and, unlike black raspberry canes which grow upright, blackberry canes are long and trailing.
