La Perla Spice Co., Inc. Authentic Mayan Seasonings including Achiote & Bistek. (Please note that we are not a market or store. Please see our contact information. Cook any way you like.

If you would like to pick up an order, you must let us know ahead of time. We are a family run business that specializes in manufacturing two Mayan seasonings: Achiote & Bistek. They can be used for cooking several kinds of meat, fish, and pork. These two products are called Achiote and Bistek and can be found in brick or paste form. Both of our Achiote and Bistek products are referred to as seaso

ning pastes since they act more as a “flavoring” rather than adding a “hot” or “spicy” taste. Achiote is our most popular seasoning paste and is red in color. It gets its beautiful color from its main ingredient, the Annatto Seed. It can be used to flavor any meat, including pork dishes, carne asada, or even rice. Its uniqueness is that, in addition to adding such fantastic flavor to food, it adds a beautiful color presentation to any dish. Bistek is our other seasoning paste flavor. It is green in color (do not worry, it will not turn your food green!) and is made from the combination of allspice, black pepper, garlic, oregano and other spices. It is mainly used to flavor beef, but also adds an amazing flavor to fish. The great thing about these two seasonings is that they are very easy to use! Simply dissolve them in your choice of lemon juice, vinegar, olive oil, or water and marinate the meat! Please visit DelMayab.com to place an order or search for La Perla Spice on Amazon.com!

It's finally cochinita pibil's time to shine! This is the Yucatan's most famous dish which is achiote marinated pulled pork. Make your own cochinita pibil at home with our Del Mayab achiote and our family's authentic Yucatecan recipe book. We are sure it'll make you say, "¡Que rico!" www.delmayab.com

Critic Brad A. Johnson says the cochinita pibil at La Lucha in Santa Ana makes a strong case for Yucatán-style pork becoming the next big thing.

Great video on Yucatecan food! Most people think that all Mexican food is the same, but every state has its own flavors, including the Yucatan. This video highlights cooking “pibil” style which, in Maya means “to cook underground”. But don’t worry, if you don’t have time to make an underground pit in your backyard, you can always use the oven or even the crockpot to make Cochinita Pibil or Pollo Pibil. Shop all your Yucatecan flavor needs including Achiote and Bistek on our website www.delmayab.com

Recipe for Chicken Fajitas with Del Mayab Achiote

*1 lb. of chicken breasts, in strips
*1 red bell pepper (sliced)
*1 green bell pepper (sliced)
*1 white onion (sliced)
*1 oz. Del Mayab Achiote (about 1/3 of a 3.5 oz Achiote Brick)
*2 sour oranges or 1 cup of orange juice
*Salt and pepper
*Oil
*Guacamole, optional
*Tortillas, optional

In a medium bowl, dissolve the Del Mayab Achiote in the juice of the oranges to create the marinade. Add the chicken breast strips to the bowl and let marinade as long as you like (we recommend at least 30 minutes but you can also let it marinade overnight in the refrigerator until it is time to cook).

In a frying pan add the oil, onions, and peppers. Once the onions and peppers are soft and the onions are translucent, add the chicken strips and stir fry. Add salt and pepper, to taste. Remove from heat until chicken is cooked and serve.

Warm-up tortillas and add guacamole. We suggest taking the tortillas and making tacos with the meat, onions, peppers. Finally, enjoy!
