Chicken Cacciatorre.

Ingredients
• 4 split chicken breasts with bone
• 1 cup of milk
• 3 TBSP EVOO
• 2 cups (or so) unbleached flour
• 1 TSP TJ Gallivans Wildcat Bourbon rub
• 1 24 ounce jar TJ Gallivans Tradizionale sauce
• 1 onion - sliced
• 1 green pepper - julienned
• 2 garlic cloves - minced
• ¾ cup white wine
Method
1. Mix the flour and the rub in a flat bowl
2. Put the milk in a bowl and dip the breasts in the milk and then the dredge them in the flour. Do this one at a time and set aside.
3. In a large frying pan heat the olive oil.
4. Brown the breasts on both sides – 5 minute or so. Remove and set aside.
5. Drain the excess olive oil and add the onions, pepper, garlic, wine and sauce. Mix well.
6. Add the breasts and simmer for a half an hour, make sure the breasts are coated with sauce. Flip periodically.
7. Chicken is done when the internal temperature reaches 165 degrees.

Here's a pinto bean recipe that we threw together today. Something to be served with the ribs we're cooking up. Yummy.

Simple and easy.

Ingredients
• 2 strips of bacon, chopped into small chunks
• 3 15.5 ounce cans of pinto beans, drained and rinsed
• 1 14.5 ounce can of diced tomatoes
• 1 cups chicken broth
• 1 half Vidalia onion
• 4 garlic cloves sliced
• 1 large jalapeno
• ¼ TSP salt
• ¼ TSP pepper
Method
1. In a medium size pan, cook the bacon. Remove bacon, leaving the fat.
2. Cook the onions and the garlic in the bacon fat until it is golden brown.
3. Add the rest of the ingredients, cover and simmer on medium/low heat for 35 minutes.
4. Pull out about a half a cup of beans and mash them. Return them to the pot and simmer for another 10 minutes.
5. Serve in small bowls topped with grated cheddar cheese and bacon bits.

Have you ever lived in or been to Buffalo? If you have, then surely you have had a Beef on Weck sandwich – the delectable delight that John Madden erroneously calls Beef on Wicky. Anyway…generally the only place you can get this is Buffalo because the Kummelweck [the weck’s full name] rolls are not made anywhere else on the planet outside of my kitchen. And maybe my cousin’s.

Original recipe is from Charlie the Butcher and provided by my sister, Margie.

Ingredients:

Kaiser Rolls, the fresher and bigger the better

Mix the next two items together in a sealable container
1 cup kosher salt – coarse salt may be used as a substitute
1 cup whole caraway seeds

The next three items make the glue [melted butter may be substituted for the glue]
½ cup water – boiled
¼ cup water – warmed
½ TBSP corn starch

Preparation:
1. Combine the salt and caraway seeds in a clean dry sealable container. Mix well.
2. Heat ½ cup of water to boil. Dissolve the corn starch in ¼ cup warm water and add to boiled water. Return to boil and thicken until it coats a spoon [this is pretty quick]. Cool and store in the refrigerator.
3. Preheat the oven to 350 degrees. Cut the rolls in half if they haven’t been cut already. Brush the top of the rolls with the cornstarch glue and sprinkle with the salt/caraway seed mixture. This is a messy process, so put the rolls on paper towels in order to clean up better. Transfer the rolls to a baking sheet for about 4 minutes or until the glue is dry.

How you prepare your roast beef is up to you, but…I use the best cut of roast beef I can find, usually an eye round roast and slow cook to medium/medium rare with Vidalia onions and garlic. Slice the roast as thin as you can and pile it on! Add a bit of jus to the roll.

Serve with fresh horseradish and a real good dill pickles, homemade is preferred. Add your favorite cole slaw, potato salad (preferably German, like my mom’s) or French fries.

The best garnish for this sandwich is an ice cold Molson’s Golden.

Thanksgiving is not only about giving thanks, it's also about leftovers! We make our stuffing with breakfast sausage, so this is a natural for breakfast.

I mixed about a cup of leftover mashed potatoes with a cup of stuffing. Then added about a half a cup of turkey gravy. dredged both sides in flower and cooked it in a cast iron skillet with olive oil on medium high heat until both sides were golden brown and crispy.

Reminder: get the skillet hot before you spray the olive oil on and these will not stick.

Yummy!

Today we are making a vegetarian chili. It's got three different kinds of beans in it. I'm doing it at the suggestion of another foodie, who said that there's no good chilis on the market and his thought was that it's because all commercially available chili comes in cans.

I'll be canning it to get the look.

Today's food p**n:
1. BBQ Chicken breasts. Sprinkle Buffalo Wide Right on the chicken before cooking, wrap in plastic wrap, set aside/refrigerate for an hour. After grilling, brush Wicked Wilson Wing sauce on both sides, cook for another 2 minutes, then finish with Dynamite Jay's BBQ sauce.
2. Grilled Vidalia onions - sprinkle Florida Orange habanero on the slices. Finish with Dynamite Jay's BBQ Sauce.
3. Mini-potatoes - cook the potatoes first, skewer them, spray with oil and sprinkle Cayuga Falls Chicken rub on them, grill until crisp.
4. Mushrooms - skewer, spray with oil, sprinkle Florida Orange Habanero. Grill.
5. Zucchini - cut lengthwise, grill with Florida Orange Habanero.

This was enough for about 4 people, if you add one more zucchini and two more onion slices. :D
