When you buy a quarter of beef from us you don’t have to choose between a front quarter or a back quarter...you get a mixture of both...the cuts included in the mixed quarter are sirloin tip, rolled rump and chuck roasts; bone-in or boneless ribeye steak; t-bone and porterhouse steak or New York strip steak and filet; sirloin and round steak; flank and skirt steak; hamburger; stew meat; short ribs; soup bones and ox tail; and you can even get the heart, tongue and liver if you so desire. Some of our customers don’t want everything that I’ve listed here so they get to pick and choose. Comment if you’re interested and we can talk about it and I’ll answer any questions you have...our next trip to the market is the middle of May, just in time for grilling season, so be sure and reserve your quarter now...

This morning I was trying to decide what to make for dinner...I opened up the freezer and among my many choices was flank steak...we like to marinade ours and cook it on the grill...throw in some grilled veggies, homemade guacamole and Siete tortillas and your tastebuds will be singing...
