Not related to honey or honeybees but just saying: Tis the season for Golabki!!

Golabki, pronounced gowumpkee is also known as Stuffed Cabbage Rolls and it’s a Polish dish consisting of cabbage leaves stuffed with a savory mix of beef, pork and rice or barely, generally served with a tomato based sauce
English speakers had a hard time reading Polish letters in the word “gołąbki”, so they used “golumpki” instead.
To sum up – the correct Polish name for stuffed cabbage is GOŁĄBKI, however, it’s totally fine to use variations such as:
• galumpki
• golumpki
• golombki
• gluntkes
• gwumpki

In the Polish language “gołąbki” literally mean “small pigeons” or “doves”.
It turns out that in the past, rich Poles have been eating pigeon meat wrapped in cabbage leaves. Poor villagers couldn’t afford to eat these expensive birds, so they made a budget version of this dish
Golabki originated in Eastern Europe. They made their way to Poland from Ukraine in the 19th century as a dish for the aristocrats.

Happy Friday!! I’m sure everyone will be busy getting ready for Christmas this upcoming week. I just wanted to throw out a few facts and reminders about pure raw honey for those who may have some questions relating to storing their honey.
• Well stored honey never expires or spoils even if previously opened so don’t toss it if it crystallizes or changes color.
• Honey is antibacterial due to its PH level which prevents bacteria from growing in the honey.
• Honey can be contaminated by moisture, so do not introduce water into the honey and store at room temperature.
• Honey can naturally crystalize, so keep honey at room temperature and store in glass container rather than plastic.
• To revive crystallized honey, melt honey again in the glass jar by creating a hot water bath with water from a kettle between 95F to 110F. Once again, make sure no water seeps into honey jar from the bath.

Some people may not be familiar with honey sticks or straws. Honey Sticks are tubes filled with various flavors of honey. The tubes are then sealed on both ends of the straw and are BPA free. As a vendor at local festivals, they were very popular among all age groups but especially kids and teenagers. They are a convenient and very portable treat with a wide range of uses:
Sweeten drinks
Energy boost after workout
Sore throat and cough soother
Add flavors to teas
Quick bite on the run
Pick me up for that afternoon slump
Great for travel
Snack for lunch boxes
There are many other uses for honey sticks as well. If you never tried them before, this might be prime time of the season to have some at hand, for use as small gifts or tokens of appreciation or a treat for yourself!
