This year we have:

Traditional Pepper Sauce - which is fermented over a year with Garlic. Earthy notes and mild in heat. Great everyday sauce. (about a two-alarm sauce).

Wild Brazilian - Very bright sauce with moderate up-front heat. Great on tacos and eggs. (about a three-alarm sauce).

Aji Limon - Mildly flavored but very hot. Excellent on fish and chicken. (about a four-alarm sauce).

Ghost Pepper - Intensely flavored with up front and considerable sustained heat. Bright and fruity flavored. (about a four-alarm sauce).

Habanero (Mild) - Very fruity and intensely flavored. Mild enough for an everyday sauce. This is our most popular sauce. (about a three-alarm sauce).

Habanero (10X hot) - Very fruity and intensely flavored however insanely hot. (definitely a five-plus-alarm sauce).

Green chili - Like eating hot green chilis right out of the garden? This one is for you. Great on Beef tacos. (about a three-alarm sauce).

Last pepper harvest of 2023. Such a busy and productive growing season. Now it's time to tend to all the different ferments. Each requires a special touch. This ferment will be ready about October 2024.
