Heading out to start setting up tomorrow morning. We got a lot to get done before yall get to enjoy that mouth watering fall of the bone pork. We got our brine all ready this week as well as the BBQ sauce. I dot like to pat myself on the back, this time just a little..... I need bottles and labels for this sauce.
It's sweet then the tangy heat kicks in ending with a subtle savory smoke hints and a something you just can't put your finger on..... so you keep going back for more.

Less then 24hrs I'll be packed up heading out to pick Mike up. We be out tending to fire, pit, and any other stuff outside kitchen wise. Yes we will be CAMPING in the dead of winter but our 2 room migshift cabin gonna be warm dry.

In 36hrs give or take the pork will be in the brine bath and 48hrs those butter go in the smokers.

Good morning top of the day to y'all.....

So few sides have come in we got cornbread and potato salad....

Also for anyone who is planning on coming in from out of town or state and dosent want to make the long trek here than turn around right after the game and drive back there is a Holiday Inn less than 3miles away.

I think the official count down day is 13 days left. In ten days the sauce and brines will be made and in 11 the chefs will all get together for one quick dry run and set up of our out door kitchen and pit/grill area

So we are coming down to the line yall I'll see you there

Steven Hawrylyshyn put the word out yesterday... Every thing is official Super Bowl Sunday weekend will be an Epic end of football season beginning of BBQ season extravaganza
There will be space for cars on site upto 20 possible more across the street from BBQ

Counting down the days till then we are on day 20 days away from the big day.

Little less than a month we will be eating amongst family and friends old ones and new ones. Enjoying the day, a pit roast? A BIRTHDAY party/bbq? Super Bowl Sunday? Does it make a difference As long as we are all together enjoying ourselves that's all that matters right.

Still looking to fill in those sides....
Cant have just a bbq with out sides
I can name a few good ones anyone can say yes too.

Coleslaw
Corn bread
Potato salad
Mac and cheese
Salad

I cant stress enough how important the sides are to the BBQ and your enjoyment of the day.

Feburary 12th Super Bowl weekend. Little over a month away. How dose someone prepare for about 36+/- hours outside tending to a pit... As tall know I'm not a person that thrives in cold weather my Gene's come from the deep south so once that thermometer drops past 60° its layers upon layers till the 1st week of spring even then sometimes it's to cold to come out of all the layers.
So how do you prepare for this... well every day I wake up put a pair of shorts on and sit in a sleeping bag next to the draftiest door in the house..... if that's not enough chill I'll crack that door and let that cold air get down into the sleeping bag.... it's like I'm warm but cold all at the same time. I'd like to think this is helping prepare for the cold weekend ahead of us. I do know that regardless my truck has heat this time around so if all else fails I can hop up in Big Betty and stay warm throughout the weekend.

Well folks we are having some technical behind the scenes issues. Roast is still on entire pig wont be going on grill. Pork will still be the focus meat. Bone in Boston Butt and Picnic shoulders possible ribs and pork belly you know gotta have the candy meat

As stated before we are in need of sides for the roast.

Please if you are planning on coming let us know what side if any you wish to bring so I can let you know if it's a double or not.
