It's Asparagoose and Gooragus season! This year our team created some art to celebrate the special time of year when both asparagus and goose eggs are being offered in our market. We invited the community to join us and we're loving all of the submissions.

Earlier this week we let our customers know that deliveries normally scheduled for today will be postponed until tomorrow and employees will have a paid day off to support racial equality in our community. We do this in response to the call of black leaders in our community at . For some of our employees this will mean participating in a silent protest and for others it may mean reflecting and listening/learning at home. For more information, visit our blog (link in bio)

For the past 500+ weekends in a row the & farmers markets fed our neighborhoods across the city.⁣⁣⁣
⁣⁣⁣

On Friday, all Seattle farmers markets were closed for a month. Taking social distancing seriously couldn't be more important. But they were closed because the city government doesn't consider them a "grocery outlet". It goes without question that they are food professionals that practice cleanliness and sanitation, but they are also an ideal place to facilitate social distancing while grocery shopping.
⁣⁣⁣

While big grocery remains open, who can weather this storm, these small businesses are most vulnerable to the economic impact of these times. The farmers and vendors are home to over 100 small businesses and 500+ employees in our community.⁣⁣⁣
⁣⁣⁣

For as long as the markets remain closed, we're working tirelessly to connect with new farmers and vendors to get their products to the greater Seattle area. Here's how you can help:⁣⁣⁣
⁣⁣⁣
⁣⁣⁣
🥕Sign up for a CSA (see farm guide)⁣⁣⁣

🥦Drive out to a farm stand like .farm or ⁣⁣⁣

🍄Fill out the farmers market survey linked in bio⁣⁣⁣

🍎Refer a friend/followers to PCH and we'll give you each $15 to use after their first order⁣⁣⁣

As we move towards spring, fresh eggs from will be great additions to your dishes. Spring is known for fresh greens: asparagus to spring onions and garlic to salad greens, it's when you remember brightness 🥬🥦

One thing I've found that helps me munching on them all spring is keeping the greens the center of the dish but adding proteins like eggs. A soft poached egg on asparagus or hollandaise sauce on purple sprouting broccoli is tasty and filling.

Here's some hints for soft poaching eggs 🥚

- use local eggs: the whites are less liquidy because they're fresh and the yolk doesn't break as easy. See the difference in the last photo.

- let your eggs warm up to room temp and add a splash of vinegar (you won't taste it, promise) as the whites will reach the temp to coagulate quicker, making them hold together better (don't use salt)

- crack your egg into a thin mesh strainer which will go into a ramekin or small bowl, it'll make it easier to slide the egg into the water with less of a splash which can make the white splatter

- heat the water until little bubbles in the bottom form, this means the water is nearly boiling but the bubbles won't make a mess of the whites

- use the spoon handle to create a whirlpool and drop the egg in the center (if doing only one, don't do if doing many)

- a slotted spoon is your friend, it's okay to help guide the yolk of its getting crazy. But only do so if whites are starting to look spindly.

- leave in for 3-4 min (only ~1 min of doing quail eggs)

- use the slotted spoon to retrieve the egg delicately. Softly poke on the outside, should feel bouncy but definitely won't break from a soft tap. If unsure, put in a little longer

- use some ice water to stop it cooking

When you're ready to eat, poke it and let the hot yolk cover your fresh greens 🥗

did a great job articulating all these tips 👏

Spring gets me so excited about all the delicious crops to come. From Kale rapini (basically Kale florets) to mustard greens (early spring arugula that's 👌 on sandwiches or *light* sautéed for a spicy bite), there's so much potential in the ground that it's hard not get caught up with it - and why wouldn't you want to??

But the other thing I love is all the positive energy farmers have this time of year. I asked Vince and Ryan .farm to send me some photos to post and added that it was bonus points if humans were in them. They is what they sent and this post is what came of it: an expression joy, connection, optimism, and love of good food. I'm honored to work with people who love what they do so much that they're willing to do whatever it takes to catch people's eye and get them to understand the value and taste of local food. (They've also both spent years at the markets and know how to work it). Such positivity is flooring.

Excited about the weeks and months to come! 🥬🥦

It's a time of mixed emotions for local NW farmers. We met last week with some of the local farmers we've connected with through . While there you can sense the relief from completing a year, the optimism and nervousness about solidifying a crop plan, and the joy of some much needed vacations on the horizon. This is all while many farms navigate serious flooding issues from rivers (see Petrina's and Alice's profiles for some great photos and captions on the experience)

The problem we are trying to collaboratively solve is how to provide an additional sales outlet that makes taking the next step of sales easier. But there's a lot of complicated issues: coordinating with a small/new farmer (
